Bulgur with vegetables is a very tasty and light dish. Plus, it's also useful. This option for cooking bulgur is perfect for garnish with meat dishes.

Ingredients:
- boiling water - 2 glasses
- bulgur - 1 glass
- sweet pepper - 2 pcs.
- tomatoes - 2 pcs.
- onion - 1 pc.
- carrots - 1 pc.
- frozen green peas - 50 g
- garlic - 3 cloves
- parsley - bunch
- salt to taste
- ground black pepper - to taste
Step by step recipe
1. First, let's prepare the vegetables.
Cut one onion into cubes.
Three one carrot on a coarse grater.
2. Cut two medium sweet peppers into small cubes. I took yellow and red.
Cut two small tomatoes into slices.
3. We clean 2-3 cloves of garlic and crush with a knife.
Finely chop a small bunch of parsley.
4. Pour 1 cup bulgur into a bowl and rinse with cold water 2-3 times.
5. Pour some vegetable oil into a preheated pan.
Pour the washed bulgur into the pan. Fry over medium heat for about 4-5 minutes, so that the bulgur is slightly brown and has a pleasant golden color.
6. Shift the whole bulgur to one half of the pan, and on the other side, pour a little more vegetable oil and put the chopped onion.
7. Pass the onion for 2-3 minutes of light goldenness. Stir the bulgur periodically. The onion is cooked, mix everything together.
8. And add grated carrots. We mix everything.
9. Add chopped peppers and 50 g frozen green peas to this. Salt everything with about half a tablespoon of salt and pepper to taste. We mix. If desired, peas can be replaced with green beans.
10. Put tomato slices on top of the porridge. Put crushed garlic here. We fill everything with 2 cups of boiling water.
11. Cover with a lid and after boiling, simmer bulgur with vegetables over low heat, about 20 minutes.
12. All the water has already been absorbed, the bulgur is ready. Add prepared parsley to the pan and mix.
Bulgur with vegetables turned out to be crumbly and very tasty. Such bulgur is an excellent side dish for meat dishes, for example, chicken or cutlets. Be sure to cook it, it is very tasty and unusual.
