Hello friends! A recipe that you can safely put at the head of the table. Here's a simple but delicious eggplant salad. Despite the fact that this outlandish vegetable was brought from India to Russia, it took root very well. In addition, it has a bunch of beneficial properties, and the use of eggplant lowers blood cholesterol levels.

Eggplant and tomato salad

  • Eggplants need to be peeled and cut as follows.
  • Cut it in half lengthwise and halve each half again.
  • Then cut the eggplants into triangles.
  • Pour in salted water and leave for 15-20 minutes.
  • Chop the tomatoes.
  • Chop the pre-washed parsley.
  • Instead of parsley, it is better to use cilantro, but it was not in the store.
  • Also grind the pre-peeled large clove of garlic.
  • Add a tablespoon of soy sauce to chopped parsley with garlic.
  • If you have sweet chili sauce, add 50 g here.
  • If not chili, add a little more soy sauce and 1/2 tsp. sugar and a little hot pepper.
  • Itโ€™s not the same, but itโ€™s delicious. To mix everything.
  • Drain the eggplants and dry them a little.
  • Prepare a plate of corn or potato starch.
  • Heat oil for frying on the stove (I took 300 g).
  • The oil temperature can be determined with a wooden spatula.
  • Dip the spatula into the oil and see if there are bubbles, then you can throw in a test eggplant.
  • Dip the eggplants in starch and fry them in batches.
  • Adjust the heat so that there is a slight boil at all times.
  • Fry eggplants until light golden and lay out on a paper napkin.
  • Also with the next batch.
  • When you finished frying the eggplant turn off heating under oil.
  • Very quickly and carefully dip the tomatoes into it and take out immediately.
  • Fried eggplant and put the scalded tomatoes in one salad bowl.
  • Add prepared dressing and mix gently.

2 eggplants (500-600 g)
0.5 kg tomatoes
1 bunch of cilantro or parsley
1 clove garlic
1 tbsp soy sauce
50-60 g sweet chili sauce (or a mixture: soy sauce, sugar, hot pepper)
