From ordinary pancakes, simply by coloring the dough, you can prepare a very beautiful appetizer for any festive table. We don't need industrial dyes to color the dough. We will use natural ones, the ones found in every kitchen. In this case, the color will turn out to be bright and saturated, and the pancakes will remain tasty and tender. Wrap the cheese filling in colored pancakes and get an amazingly tasty and beautiful appetizer.
By the way, these pancakes can be stuffed with a wide variety of fillings - cottage cheese, cheese, fish. It all depends on your imagination!
Such colored snack pancakes will definitely cause delight and surprise.

Ingredients:

Dough:

  • milk - 750 ml.
  • flour - 2 tbsp.
  • eggs - 2 pcs.
  • butter - 50 g
  • vegetable oil - 6 tbsp. l.
  • sugar - 1/2 tsp l.
  • salt - 1/2 tsp l.

Dyes:

  • beets - 1 pc.
  • frozen or fresh spinach - 50 g
  • turmeric - 1 tsp

Filling:

  • boiled eggs - 10 pcs.
  • cheese - 250 g
  • mayonnaise - 100 g
  • garlic - 2 cloves

Step by step recipe

1. First, let's prepare the pancake dough.


Break 2 eggs into a bowl, pour 0.5 tsp. sugar and 0.5 tsp. salt. Beat everything with a mixer until light foam.

2. Pour about a third of the milk into the beaten eggs. Mix again. You will need 750 ml of milk in total.

3. Add about 2 cups flour to the mixture of milk and eggs. We mix everything so that there are no lumps.

4. Add the remaining milk and mix completely.
Let the finished dough rest for 15 minutes.

5. During this time, we will prepare natural dyes for pancakes.
For red pancakes, squeeze the juice out of the beetroot.
1 small raw beets three on a fine grater.
Put the grated mass on cheesecloth folded in half. Gently squeeze the juice from the beets with your hands. It will need about 100 ml.

6. We will color the pancakes green with spinach.
Take 50 g of defrosted spinach and add about 4 tbsp. l. pancake dough. We add the dough in order to increase the volume. Grind everything with an immersion blender until smooth.

7. Divide the finished pancake dough into 3 approximately equal parts.

8. Put prepared spinach in the first part and stir the dough well. If the dough is thick, add a little more milk or water.
At the end, add about 2 tbsp to each dough. tablespoons of sunflower oil, so as not to constantly grease the pan.

9. Add the beet juice to the second part of the dough.
So that the dough is not too liquid, add another 1-2 tbsp. l. flour and mix well.
At the end, add 2 tbsp. l. vegetable oil.

10. And in the third part of the dough for yellow, add 1 tsp. turmeric. We mix everything. Add sunflower oil.

11. Fry pancakes in a well-heated skillet. Before the first pancake, grease the pan with vegetable oil. Pour 1 ladle of dough into the center of the pan and distribute it evenly over the entire surface. I downloaded the frying pancake on one side, as soon as the edges begin to peel off the pan, we immediately turn it over to the other side.
I made 15 pancakes in a frying pan with a diameter of 25 centimeters.

12. Now let's prepare the filling for the pancakes.
10 boiled eggs, three on a coarse grater.
250 g three cheese on a fine grater.

13. Put grated cheese and eggs in a bowl. Squeeze 2 cloves of garlic through a press. We fill everything with mayonnaise and mix well. The filling is ready.

14. We put the pancake and grease it over the entire surface with the prepared filling. You don't need to put a lot of fillings. Roll the pancake with the filling into a tube.

15. So we fill all the pancakes.

16. Cut the finished pancakes with filling into portions.
We lay out the appetizer beautifully on a platter and serve it on the table.
