Step by step recipe
1. To prepare Easter, we need 150 g of walnuts. About a third of the nuts need to be fried, and the rest will be needed for decoration. Pour the nuts into a baking dish or directly onto a baking sheet. We put it in a cold oven and turn it on at 170 degrees. We fry the nuts for 15 minutes.
2. Peel the cooled nuts. Chop the prepared nuts with a knife.
3. Now let's prepare the curd mass.
Put 600 g of cottage cheese in a bowl and pour 100 ml of cream or non-acidic sour cream.
Grind everything with an immersion blender. You should get a tender mass without lumps. Cottage cheese must be non-acidic and fresh, with a fat content of at least 9%.
4. Add 100 g of soft butter and 250 g of boiled condensed milk to the grated curd mass. Beat everything again with an immersion blender until smooth.
5. Add prepared nuts to the resulting curd mass. Mix everything with a spatula or spoon.
6. We will fold Easter in such a special form for Easter cottage cheese. It can be metal, like mine, wood or plastic. The height of my shape and the length of the ribs at the base are 12.5 cm
7. We put the form on the plate upside down. We cover it with gauze folded in two. In order to lay out the gauze more beautifully in the form, it must be moistened with water and unscrewed.
We distribute cheesecloth beautifully in shape. We try to lay the bends in the corners.
8. When everything is ready, we spread the curd-caramel mass.
Gently cover the top with the remaining gauze.
9. For Easter cottage cheese, put a small plate and a load on top. I have a heavy stone mortar as a load. You can also put a closed jar of water.
In this form, we put everything in the refrigerator for about 12 hours, so that the excess serum is glass.
10. My Easter stood the night, all the excess liquid was glass.
We remove the weight, the plate and put it on a dry plate. We unfold the gauze on top. For Easter we put a plate on which we will serve it on the table. Turn the Easter over onto this plate.
11. Remove the metal mold and carefully remove the gauze.
Easter is ready, all that remains is to decorate.
We take the nuts that have remained and decorate with them on the bottom of Easter. We also put a nut on top.
