When there is no inspiration at all and I have absolutely no idea what to cook, I turn to cookbooks. Almost always I manage to find a recipe that I can remake "in my own way" and get something interesting. Today I want to offer you an idea for a salad, the recipe for which I have not changed in any way, except that I replaced the vegetable oil with lean mayonnaise.
So, for the salad, you need to boil potatoes and carrots in advance.
I cut them coarsely enough, I do not grind them. This salad, it seems, should not look like Olivier.
I also cut a few small pickles. The main thing here is not to overdo it, so that they do not kill the taste of the whole salad.
I cut one small red onion into quarters. I don't pickle it, but you can pickle it by adding a little vinegar and the same amount of water. Let it stand for about 15 minutes and drain off the liquid.
White (or red) beans are added to the salad as a protein component. I don't add salt, but you can add salt to taste. Add a couple tablespoons of lean mayonnaise and mix well.
Ingredients:
Potatoes 2-3 pieces of medium size
Carrots 1-2 pieces of medium size
Red onion 1 pc
Canned beans 1 can
Pickled (pickled) cucumbers 2-4 pcs depending on the size
Lean mayonnaise or vegetable oil for dressing
