Tsar's cottage cheese Easter turns out to be very tender, moderately sweet, with pieces of dried fruits and a delicate aroma of vanilla. By the way, you can add any dried fruits, nuts, candied fruits and even zest to your taste to Easter cottage cheese.
Prepare such a delicious treat for the Easter table, it's very simple!

Ingredients:

  • milk (fat content not less than 2.5%) -2 l
  • sour cream 20% - 400 ml
  • eggs - 3 pcs.
  • butter - 200 g
  • sugar - 200 g
  • vanilla sugar - 10 g
  • dried apricots - 150 g
  • raisins - 100 g

Step by step recipe

1. Pour 2 liters of milk with a fat content of at least 2.5% into a saucepan and put on fire.

2. While the milk is boiling, put 400 g of 20% sour cream in a separate bowl and break 3 eggs here.
Mix everything with a whisk until smooth.

3. As soon as the milk has boiled, pour the sour cream mixture into it in a thin stream, while constantly stirring. Cook the mixture for another 1-2 minutes and remove from heat.

4. Put a sieve on an empty pan and cover it with gauze. Pour the still hot curd mixture from the pan here. We leave everything for 20-30 minutes to glass the serum.

5. Put 200 g of softened butter in a separate bowl. Pour 200 g of sugar and 10 g of vanilla sugar here. Beat everything with a mixer until smooth.

6. Add the already drained cottage cheese to this mixture. Again, beat everything with a mixer until smooth.

7. My dried apricots, pour over boiling water and cut into small cubes.

8. Add 100 g of chopped dried apricots and 100 g of washed raisins to the ready-made curd mixture.
Mix everything with a spoon.

9. We put the form for Easter in a container with sides and cover with damp gauze folded in 2 times.
We put all the curd mixture here.

10. We wrap the cheesecloth in the middle and put the load on top.
We put the whole structure in the refrigerator for about 12 hours so that the serum is glass.

11. After 12 hours, we remove the load. Gently take the Easter out of the mold and remove the gauze.

12. Decorate the finished Easter on the bottom and top with cut pieces of dried apricots. I also decorated Easter on top with mastic flowers and sugar beads.
