Today I want to share with you a recipe for pancakes with yogurt. They are so fragrant that it is impossible to resist. In terms of consistency, they are a bit like cheese cakes and pancakes at the same time.

🍰Ingredients I used:

  • 1 chicken egg
  • 400 g of yogurt (from a jar, I have 2%),
  • 100 g of milk (I have 2.5%),
  • 150 g whole grain rice flour
  • pinch: salt, vanillin,
  • 1 teaspoon baking powder.
  • frying oil no more than 3 g.

🍰Cooking

Mix together the egg, yogurt, sweetener, vanillin and a pinch of salt.

Add whole grain flour (I have rice) and baking powder. Knead the dough so that there are no lumps left.

As for the flour.
I use whole grain rice flour because it behaves very well in baked goods. It does not give it an unpleasant aftertaste, and the baking itself turns out to be very tender and slightly moist. In addition, rice flour does not contain gluten, and it also requires a little less than wheat, for example.

Depending on the flour and the thickness of the yoghurt, you may need a little milk to thin the dough.

It took me 100 ml of milk to make the dough thinner.

This is how the dough turns out, thick:

We bake pancakes in a frying pan greased with one drop of vegetable oil under a lid on both sides. The fire should be small.

I served pancakes with sour cream and a little homemade jam or date syrup.
