We are preparing a healthy raw food festive Easter, which resembles the usual curd cheese (but plus it the fact that it is without casein - milk gluten), i.e. does not "clog the body", but heals and cleans up.
Ingredients:
1. Green buckwheat - 1 glass
2. Banana - 2 pcs (ripe)
3. Lemon - 1 wedge
4. Coconut cream - a third of a glass
5. Coconut flakes - a handful
6. Vanilla - drop
7. Raisins - a handful
8. Orange zest - 3x3 cm slice
Preparation
In the evening, green buckwheat was soaked in water at room temperature to make it "active". In the morning, the already soft buckwheat was washed well, dried in the sun.
We immerse our buckwheat in a blender container, add coconut flakes, banana pulp, coconut cream, drip lemon juice and vanilla (if desired, add a little orange zest and a couple of dried apricots).
Beat for about a minute until a viscous mass is formed. Then wash the raisins, dry them, knead them into the resulting "dough".
We shift the mass into a mold (you can use a sour cream jar or plastic cups). We put in the freezer overnight or for 3-5 hours.
We take out our pseudo-cheese Easter from the freezer. We take it out of the mold (it easily slips out if it is allowed to melt for 5-10 minutes), decorate its hat (pour it with coconut cream, sprinkle with grated orange zest, sprinkle with colored glaze or turn on imagination and decorate the Easter hat somehow yet).
