This rice was presented to me on one of my trips, like rice in Cuban style. Not in Kuban, but in Cuban. Like on an island, where it is warm, sunny, a lot of fruits, vegetables and little meat.
I do not know for certain whether or not there is little meat in Cuba (I haven’t been there yet, but I don’t lose hope). However, this composition perfectly saturates, can serve as a good dinner (or breakfast, if you have time), and is also very interesting in its flavor combination.
Well, and one more thing - if the family members begin to buzz that all the products are very familiar, you can always tell them - are you eating a southern delicacy here, and are you unhappy with something else?
I warn you right away: you need to buy bananas with green, solid, otherwise they will fall apart when frying.
So, we take:
- One onion - preferably white or red, not spicy;
- A clove or two of garlic - whatever you like;
- Half or even a whole chili;
- A jar of tomatoes in their own juice or a pound of fresh tomatoes;
- Rice - 200-250 grams;
- Eggs (by the number of eaters);
- Two hard, not quite ripe bananas;
- Salt, fresh herbs, oil.
How we cook:
Cut the onion into small cubes and fry until transparent, as soon as this moment is reached - add chopped garlic and chili pepper cut into half rings (clean it from seeds and partitions).
We fry for a couple of minutes and then we send finely chopped tomatoes to all this (peel off the skin).
We simmer the sauce until it acquires the desired consistency (someone likes it thicker, someone loves it more liquid). Then - salt, so as not to overdo it.
Boil the rice so that it turns out to be crumbly. The easiest way to do this is to first fry it a little in vegetable oil, and then boil it.
When the rice is almost ready, we send eggs to the pan (we just make fried eggs), and also bananas, cut into two halves (we cut them along). Fry bananas on both sides until lightly browned.
Bananas are sent to a plate, then rice, sauce on it and an egg on top.
Well, bon appetit! Try dipping a fried banana in a runny yolk and then eating it with rice and sauce. A very interesting combination!
