Summer is the time for vegetables, berries and fruits, and it is also the time for harvesting for future use. I propose to cook a proven recipe for zucchini salad for the winter.
It is not difficult and does not take long to prepare, it consists of a minimum of products, but the taste is amazing. For many years now I have been making such a salad from zucchini, and in winter it is one of the first to leave.
For the preparation of the salad, it is advisable to take young zucchini or zucchini with thin skin and soft seeds. If your zucchini is a little overripe, then peel and seed them.
This winter vegetable salad goes well with any side dishes and meat. This is a great solution for every day.
Ingredients:
- zucchini (zucchini) - 3 kg
- carrots - 1 kg
- sugar - 250 g
- refined sunflower oil - 250 g
- table vinegar 9% - 200 ml
- salt - 2 tbsp. l. (with a small slide)
Step by step recipe
1. First, let's prepare all the ingredients.
First, cut the zucchini lengthwise and then cut into cubes about 1 cm in size. Since I have young zucchini, I do not cut the skin and take out the seeds. If the salad is made from older zucchini with already tough skin and hardened seeds, then cut it off and remove the seeds. Also, instead of zucchini, you can safely use zucchini.
For the salad, you need 3 kg of chopped zucchini or zucchini.
2. Cut 1 kg of onion into half rings or quarter rings.
1 kg of three carrots on a coarse grater.
3. Cooking the marinade.
Pour 250 g of sugar into a saucepan, 2 tbsp. with a small slide of salt, pour 200 ml of 9% vinegar and 250 ml of refined sunflower oil.
4. We put the marinade on fire and heat, stirring occasionally, until the sugar and salt dissolve.
5. Pour vegetables with hot marinade. Mix everything well and leave at room temperature for 2-3 hours, so that the vegetables let the juice out. Mix vegetables from time to time.
6. 2 hours passed, the vegetables started to juice. We put the pan on fire and heat to a boil. When the liquid boils, reduce the heat and cook the salad over low heat for 15 minutes.
7. We put the hot salad in sterilized jars, tamping it a little. At the end, if necessary, add liquid so that the salad in the jar is covered with liquid.
8. Cover the jar with a sterilized lid and roll it up.
Turn the closed jars upside down, cover them with a blanket folded several times and leave them in this position until they cool completely.
From this amount of ingredients, 5 liters of salad are obtained.
Zucchini salad for the winter turns out to be very tasty and aromatic. In winter, it can be served with any main course. Be sure to cook it, especially since it is not at all difficult to prepare.
