Hi friends! I suggest you cold soup recipewhere I combined two famous dishes from Korean and Russian cuisine - Kuksi and Okroshka. This cold soup turns out to be very tasty and unusual. If someone does not like fish, it is quite possible to replace it with chicken. It will also be very tasty.

Korean cold soup Kuksi + Okroshka

  • Grind the tomatoes into a smooth puree.
  • Chop parsley and green onions, add salt and mash with a mashed potatoes.
  • Add chopped tomatoes, soy sauce, vinegar, sugar, paprika, parsley and green onions to two liters of cold boiled water.
  • Stir everything until sugar dissolves.
  • Refrigerate for two to three hours.
  • Cut the boiled potatoes and cucumbers into strips.
  • Salt and mix cucumbers. Drain off excess moisture.
  • Cut the onion into quarters.
  • Heat vegetable oil in a frying pan, put onion and quickly fry over high heat.
  • Reduce heat, bring to full readiness and turn off.
  • Add fried onions in potatoes and mix everything, if you need to add salt.
  • Add black pepper if desired.
  • When the liquid component is infused and cooled, you can serve the soup.
  • Put potatoes with onions, fish, cucumber salad and broth in a plate.
