At first glance, the recipe seems out of place - what kind of pumpkin in the month of May? Pumpkins are an autumn vegetable, traditionally, a symbol of the harvest... But now in any hypermarket there is a pumpkin to choose from - from banal, almost fodder, to the most delicious - nutmeg, at any time of the year.
So why deny yourself a little treat - delicious pumpkin pancakes for breakfast?
Moreover, cooking them is as easy as shelling pears, and they taste much better than zucchini. Although... This is not for everybody, of course. There will be those who prefer zucchini, and, for sure, people will not like pumpkin or zucchini for Kotov. All markers are said to be different in taste and color.
By the way, kids love these pancakes. Because they are tender, with a light fruity aroma (this is what is responsible for this) and cinnamon piquancy. Whoever likes them can add an apple, finely chopped and fried in butter (or raw), but in general, they sound great without any apples, but with jam.
Teasing?
Then we take:
- 500 g pumpkin;
- A couple of eggs;
- A tablespoon of sugar;
- A pinch of salt;
- Cinnamon to taste
- A glass of flour (170 grams);
- A spoonful of baking powder.
How we cook:
We clean the pumpkin from the skin, cut into cubes and simmer in a little water until almost cooked, after which we make mashed potatoes from it.
To this puree (chilled), add the beaten eggs, sugar, salt, cinnamon / flour and baking powder and knead. The dough should not be very thin - the usual pancake dough.
We fry in a hot frying pan, you can - in butter (it tastes better), and serve, or simply sprinkle with a mixture of sugar with cinnamon, or with jam, it's good if this jam has spicy or piquant notes - then the pumpkin will be more interesting, but also ordinary will go.
