Stew cucumbers urgently! No, we do not fill the fire in them with water, but extinguish it - as expected, in a small amount of liquid. And not pickled or salted (by the way, they are delicious to fry), but fresh, the freshest, new harvest. Here you can draw a smirking smiley face.

The denser the cucumber, the fewer seeds it contains, the tastier it will turn out - I think.

True, not everyone agrees with this, and friends who have lived in Kazakhstan for a long time recommend using overripe cucumbers.

But, if we are to be completely objective, then you can take both fresh and overripe cucumbers, only scoop out the seeds from overripe with a spoon.

And put it out. In the company of other products.

We take:

  • Cucumbers - 500-800 grams, no more need, you can overdo it;
  • Tomatoes - 500 grams;
  • Minced meat (preferably beef or veal, can be made from turkey, the main thing is not fatty - 500 grams;
  • A large juicy onion (not spicy!);
  • A bunch of dill;
  • A couple of cloves of garlic;
  • chili pepper (be sure to peel off seeds and partitions);
  • Salt / pepper / sugar - to taste;
  • A glass and a half of vegetable broth for stewing (you may need less, but keep a stock);
  • A couple of tablespoons of sour cream;
  • Frying oil.

How we cook:

The cucumbers should be cut lengthwise and the seeds removed if they have already developed. Then we cut them into pieces about 1 centimeter thick. Blanch the tomatoes, peel, cut into cubes.

Peel the onion and cut it into small cubes, and chop the garlic.

We send the minced meat to hot oil along with chopped onions and garlic, and when it turns brown (fried), add chopped cucumbers there and fry for about five minutes.

Now we send chili peppers, tomatoes into the pan, let it simmer for a couple of minutes and pour in the broth - see that the vegetables are covered with almost everything, but at the same time the dish has become too liquid.

We simmer everything together until the cucumbers become translucent - about twenty minutes.

Then we try, salt, pepper, add sugar if necessary - if it turns out too sour. Here you can add sour cream (but if you do not like such a combination as tomato and sour cream, then you can not add).

It can be served either simply with bread or with a side dish (for example, with young potatoes).
