I love sweets, I know that it is not useful, I cannot deny myself it. So you have to find or come up with the most recipes for desserts where there is a minimum of "harmful" such as white flour and sugar.
To make a coconut cake (I can't even call it a cookie), you only need a few ingredients.
The main thing is, of course, the coconut flakes. It needs to be mixed with powdered milk, I have coconut. Powdered coconut milk is now readily available in large stores. For sweetness, I literally add 1 tablespoon of sugar, it can be replaced with erythritol or another sweetener.
Add two eggs and mix well.
You should get a thick sticky mass from which you can easily form balls.
The balls can be formed in any size, I make the size of a chicken egg and spread on a baking sheet with lined baking paper.
Bake for 15-20 minutes at 180 degrees. In the meantime, while the cookies are in the oven, you can melt the chocolate (without sugar, of course) into which you can then dip the finished cake.
This is how the cake looks beautiful on a plate. Agree, it's hard to refuse and not eat 1,2, or even 3 things.
