It perfectly combines the sweetish roasted celery root, the freshness of apples and cucumbers. And lemon juice gives a pleasant citrus flavor. This salad is full of vitamins and minerals. It is great for every day preparation in any season. And the ingredients are all simple and very affordable.
Also, instead of pickles, you can add fresh cucumber to this salad, which will add juiciness to it.

Ingredients:
- celery root - 700 g
- big sweet and sour apple - 1 pc.
- pickled cucumbers - 4 pcs.
- parsley - bunch
- lemon juice - 1-2 tbsp. l.
- salt to taste
- ground black pepper - to taste
- vegetable oil - for frying
Step by step recipe
1. Peel 700 g of root celery. Cut the peeled celery into slices about half a centimeter thick. Cut the celery slices into cubes.
2. Put the prepared celery in a frying pan with a little vegetable oil. Fry over high heat, stirring occasionally until soft.
3. 1 large sweet and sour apple, remove the core and peel. First cut the quarters of apples into slices, and then cut the slices into cubes.
4. Pour the sliced apples with about two tbsp. l. lemon juice and mix well. This is done so that the apples do not darken. It will also give the salad a nice citrus flavor.
5. 4 small pickled cucumbers are also cut into cubes. If desired, you can add fresh instead of pickled cucumber.
Finely chop a small bunch of parsley.
6. Put fried and cooled celery, apples and cucumbers in a bowl. We also add parsley here.
Salad to taste and pepper. We mix everything.
