This year we have grown a lot of different currants. I was especially pleased with the black currant.
Almost 4 buckets of berries were collected from three bushes. And what to do with such wealth? How to "beat" the harvest?
We have already started the harvesting season with black currants. We close the compotes, cook jam and jam. The easiest way to prepare currants, of course, is jam.
I really like to make a "mashed" treat from this berry. Through a meat grinder.
Ingredients:
1 kg of black currant berries
0.5 cups of water
1.5-2 kg of sugar (according to the state and acidity of the berries)
How to cook:
1. Sort out the currants, remove the remnants of the brushes and stalks. Rinse under running water. And dry a little in a sieve.
2. Skip the berries through a meat grinder. We need mashed potatoes. It does not need to be wiped through a sieve. The seeds and skins will do the trick.
Important! The proportions are indicated for 1 kg. If you have more currants, then sugar and water should be increased accordingly.
3. Pour sugar in currant puree and pour in water. Stir and leave for 10-15 minutes to the side for the sugar to begin to dissolve.
4. Then put the dishes with the berry mass on low heat and bring to a boil with constant stirring. Turn off, remove the foam and cover with a lid or a towel, let the jam stand.
5. Then, after 5-10 minutes, repeat the cooking. Now cook until tender. Everything will be clear here, as soon as the jam begins to thicken and becomes almost like marmalade - it's done.
6. Transfer the healthy vitamin blackcurrant jam to clean dry jars and close the lids. Can be made of plastic. Store in a cool place.
Under an iron lid it fits well in a regular kitchen cabinet.
