Today I want to offer you a recipe for my favorite chicken liver dish.
✨ The dish turns out to be not only very juicy and tasty, but also with a beautiful presentation, in this version it can be safely served to the festive table.

📕 For cooking, you need the following ingredients: 🥙
Chicken liver - 300 g
Chicken egg (cat. S-1) - 2 pcs.
Wheat flour - 6-7 tbsp. l.
Salt, black pepper, dried garlic - to taste
Carrots - 1 pc.
Onions - 1 head
Vegetable oil - 2-3 tbsp. l.
Tomato juice - 1 glass (200 ml)

We wash the chicken liver, dry it, clean it from films and fat. Cut into small pieces with a sharp knife.
We transfer the chopped liver into a deep bowl, drive in 2 eggs, add salt and spices.
We mix everything well with a spoon or fork - whichever is more convenient for you.
Separately sift the flour and gradually add it to the liver mass. Add a spoon and mix immediately so that no lumps appear, after all, it is not so easy to get rid of them later! I advise you to put 5-6 spoons first, and then add the rest if necessary.
As a result, you should get a mass similar in consistency to the classic pancake dough, that is, quite thick and with larger pieces of liver.
Next, we take any heat-resistant form, into which the entire volume of the liver dough will immediately enter. It can be ceramic, glass, metal, silicone dishes. We cover it with a film or a clean plastic bag. Pour the mass out of the liver.
Now comes the fun part.⤵️⤵️⤵️
We will cook the liver in a water bath in a frying pan. To do this, put cheesecloth or another clean cloth folded in several layers at the bottom of a large frying pan. If you have a sterilization mat, great, you can use that too. On top we put a dish with a liver and pour water into the pan. It should be so much that it approximately reaches the level of the liver mass. But expect that when boiling, it should not rise above the sides of the form. Cover the pan with a lid and set on low heat. After boiling water, we detect 10-15 minutes.
This time will be just enough to start making the sauce. It's very simple, and if you haven't prepared it yourself, you've probably tried it. Peel and cut the onion into small cubes, and three carrots on a coarse grater.
Heat a little oil in a frying pan, pour the onion first. Once it becomes transparent, add the carrots. Mix and fry everything until soft.
Then pour in tomato juice, add salt and pepper to taste.
Stir and simmer for 5 minutes, until thickened.
In the meantime, this is how the liver has changed.
We transfer it to a plate, thanks to the bag it will come out quite easily. We remove the film.
Pour with sauce, decorate with herbs as desired and serve. The liver is very tender and not dry. And most importantly - a minimum of oil.
