Such an unpretentious biscuit roll is perfect for home tea drinking. Use your favorite homemade jam as the filling. You can also use various creams based on cream, condensed milk or cream cheese in the filling. If desired, you can also add berries and fruits according to the season. And you will always have a delicious dessert for tea on your table.

Ingredients:

Biscuit:

  • eggs - 4 pcs.
  • flour - 100 g (4 tbsp. l. with an average slide)
  • sugar - 80 g (4 tbsp. l. with a small slide)
  • vanilla sugar - 8 g

Filling:

  • jam (jam) - 4 tbsp. l.
  • sour cream - 1 tbsp. l.

Step by step recipe

1. First, let's make a biscuit.
Divide 4 eggs into yolk and white.

2. Beat the whites with a mixer gradually adding 80 g of sugar and 8 g of vanilla sugar to them.
Who does not have weights, you can use this proportion for 1 egg, take 1 tbsp. l. sugar and 1 tablespoon flour with a small slide.

Beat the whites with sugar until a strong, stable foam. This is very important, otherwise the biscuit will not work.

3. Add the yolks to the whipped whites one at a time, while constantly beating them with a mixer.

4. Pour 100 g of sifted flour into this mass in three approaches, each time briefly stirring with a mixer at low speed. If the mixer does not have a low speed, then it is better to stir the dough with a spatula by hand. The biscuit dough should remain light and airy.

5. Put the prepared dough on a baking sheet covered with parchment paper.
The size of my baking sheet is 26 * 37 cm. Distribute the dough evenly.

6. We put in the oven preheated to 180 degrees. We bake for 15 minutes.
The biscuit should not dry out, otherwise it will curl badly.

7. Put the baked sponge cake immediately hot on a towel and remove the parchment paper.
Turn it over again and roll it together with a towel. Let the biscuit cool in such a curled state.

8. Let's prepare the filling for the roll. This is one of the fastest and easiest fillings.
We take 4 tbsp. l. any jam or jam. I have raspberry jam. We add 1 tbsp to it. spoon sour cream and mix. The jam becomes thinner and will saturate the biscuit roll well.
You can also use only jam for the filling, without sour cream.

9. Carefully unfold the cooled biscuit. Lubricate in the middle with the prepared filling. Roll up the roll again tightly.

10. We wrap the roll in plastic wrap and put it in the refrigerator so that it is well saturated. If you are in a hurry, then the roll can already be cut and served.

11. Decorate the finished roll with chocolate on top. I melted it in the microwave.

The sponge roll with jam turned out to be very tasty, soft and tender. This roll is very easy to prepare. The filling can be completely different, for example, you can take condensed milk, custard or butter cream.
