Biscuit roll is a fairly simple and quick homemade baked product. Such a sweet roll is perfect for daily tea drinking with the whole family. But guests can also be treated to such a dessert, no one will refuse it!
The biscuit roll according to this recipe turns out to be soft and juicy, and the moderately sweet filling of cottage cheese with strawberries will delight you with a rich aroma and taste. By the way, instead of strawberries, you can add any seasonal berries and fruits to the filling.
Biscuit roll with cottage cheese and strawberry cream will create a cozy atmosphere and gather the whole family at the table. Be sure to cook it, it's simple and delicious.

Ingredients:

Biscuit:

  • eggs - 4 pcs.
  • flour - 100 g
  • sugar - 80 g

Filling:

  • strawberries - 150 g
  • cottage cheese - 150 g
  • sugar - 50 g
  • vanilla sugar - 5 g

Step by step recipe

1. First, prepare the biscuit dough.
Break 4 eggs into a bowl, dividing them into yolk and white.

2. Beat the whites, gradually adding 80 g of sugar. Beat until firm, stable foam, this is very important for biscuit dough.

3. Add the yolks to the whipped whites one at a time without stopping whipping. Beat until smooth.

4. Add flour to the beaten eggs in three approaches, be sure to sift it through a sieve. Gently mix the dough with a spatula. After kneading, the dough should remain airy and light.

5. Put the finished dough on a baking sheet covered with parchment paper. We distribute it on parchment paper in the form of a rectangle.

6. We put everything in the oven preheated to 180 degrees. We bake for about 12 minutes. Be careful not to overdry the biscuit.

7. Take the biscuit out of the oven and immediately transfer it to a towel. Remove the parchment paper from the biscuit. Turn over and roll the biscuit together with the towel into a roll again. We leave it in this form to cool.

8. While the roll is cooling, prepare the filling.
Pour 150 g of cottage cheese, 150 g of strawberries, 50 g of sugar and 5 g of vanilla sugar into a bowl. Grind everything with an immersion blender until smooth. Strawberries can be used frozen. You can also make the filling with other berries.

9. We unfold the biscuit and remove the towel, it is still slightly warm.
Put the prepared filling on the biscuit and distribute it evenly throughout the biscuit. Since the filling is a little liquid, we leave it on the biscuit for about 5 minutes so that the excess liquid is absorbed into the biscuit.

10. Gently roll the biscuit into a roll, without squeezing too much. We wrap the resulting roll in plastic wrap and put it in the refrigerator to infuse for about 2 hours.

Cut the finished roll into portions and serve.
The biscuit roll with cottage cheese and strawberry cream turned out to be very tasty, delicate and fragrant. It is easy to prepare and is perfect for homemade tea with family and friends. Be sure to cook it, it's delicious.
