Cheesecakes with zucchini - a simple recipe
Preparation:
- Grate young zucchini on a fine grater directly with the skin. It is better to remove the skin from a mature zucchini.
- Transfer the grated zucchini to a colander to drain excess liquid.
- Add salt, stir and leave.
- Squeeze 1 clove of garlic into the curd and add a little chopped herbs, 2 eggs and grated cheese, a little salt and a little black pepper for flavor.
- Mix everything well and thoroughly.
- Add the squeezed zucchini to the curd and stir.
- Add flour last. The amount of flour depends on the moisture content of your curd and how well you squeezed the zucchini.
If you don't feel like molding, you can spoon the dough into the pan. You can fry on parchment with just a little oil. But I like to mold them like regular classic cheesecakes in flour.
Preheat the skillet well and lay out the curd cakes. If the heating is low, the syrniki will spread, I keep it medium and even slightly higher.
Fry the pancakes on both sides until golden brown. When turned over, you can reduce the heat so that the cheesecakes are baked well
As a result, I get wonderful syrniki with zucchini. They are best eaten with sour cream or yogurt sauce.
