Starting from the banal "cucumbers and tomatoes" and pumping into quite exotic ones with mango, shrimp and flying fish roe.

Let's make a salad of beets today? beets, I think, are found in everyone.
From beets you can. by the way, a lot to cook - including carpaccio. But it's too lazy to mess around with delicacies, and a salad with beets is more honest. It is fresh, with a mild but bright taste and an interesting combination of products, and also - thanks to the cheese - filling.
So, we take:
- 500 grams of beets
- 200 grams of feta
- Bunch of green onions
- A couple of handfuls of pine nuts
- 3 tablespoons apple cider vinegar
- 3 tablespoons of oil - olive or other vegetable
- Lettuce leaves
- Salt and pepper to taste
How we cook:
Wrap the beets in foil and bake in the oven until tender. You can also cook in the microwave - then you don't need to wrap anything, you just need to pierce the beets with a knife several times so that they don't explode.
While it cools down, fry the pine nuts in a dry frying pan - until brown.
Cut the green onion into small pieces, but cut the feta into cubes. Cut the cooled beets into the same cubes as the feta.
We wash the lettuce leaves with ice water, shake off well, mix the apple cider vinegar and oil with salt and pepper.
We collect the salad - put lettuce leaves on the bottom, on them - beets, on the beets - feta cubes, sprinkle it all with nuts and green onions and pour with dressing.
If you mix it right away, the feta from the beets will color, so if you want to serve a beautiful salad, do not mix it. And before serving, you should put it in the refrigerator for half an hour - so that the dressing is absorbed a little.
