Zucchini by the middle of summer becomes the most terrible inhabitant of the beds. if at the very beginning of the warm season we rejoice at the first young zucchini, then after a month all the domestic ones begin to howl from them.

The fertility of zucchini is scary. You can eat them for breakfast, lunch and dinner, pickle, salt and even make jam from them, and there are no fewer fruits on the bushes, on the contrary... Zucchini lie in the beds, gaining strength and gradually turning into monsters, which it is a pity to throw out, but to attach - almost impossible. Hearing the question “you don’t need zucchini”, acquaintances, without hesitation, try to hit the run, and if zucchini as gifts to appear on their doorstep, then you immediately understand - zucchini here is not at all happy.

Well, this is me, too something distracted from the topic. And if you go back to cooking, then... You need to dispose of the zucchini!

Moreover, you can cook a lot of delicious from them. Banal pancakes of them are bored, so let's make original ones!

We take:

  • Zucchini - we need about four hundred grams of pulp;
  • Two large eggs;
  • Two hundred grams of ricotta (do not throw your slippers, there is in any supermarket a long time ago);
  • One hundred grams of good hard cheese (we will rub it);
  • About 5-6 tablespoons of flour;
  • A little baking powder (you can write on the tip of a knife, but in fact you need more, and the amount will have to be calculated based on the weight of the flour used, the proportions are usually on a bag with baking powder there is);
  • Salt to taste;
  • Frying oil.

How we cook:

We clean the zucchini and rub them on a coarse grater. Squeeze lightly, mix with beaten egg, salt.

Add ricotta to this mixture and stir thoroughly. Next, stir in the grated hard cheese, add flour and baking powder - we make sure that the consistency of the dough is not too thick.

Salt and fry like regular zucchini pancakes.

The only but: it is better to serve them not with sour cream, as we used to eat pancakes, but with a salad of tomatoes and herbs. Due to the presence of cheese in the pancakes, this is the perfect combination
