More than once or twice on this channel I have confessed my tender love for lentils. So today - another ode to her, bean.
This time - in the form of a salad. It has a very interesting texture: lentils side by side with baked beets. And also - a very, very interesting, sweet-sour, piquant taste. Very fresh and summer-like, despite the fact that the usual summer vegetables are not used.
Salad sounds great as a side dish for fish, for example. But this is for me, of course. You can try with other products. Or you can eat it like that, lentils are a pretty satisfying ingredient.
We take:
- 200 grams of lentils. Better - green or gray, because red boils very quickly and does not retain its texture and shape, but you can also red - the main thing is to watch it during cooking;
- 400 grams of beets;
- One and a half glasses of vegetable broth or water;
- A teaspoon of Bavarian or some other grain mustard, not very hot;
- Teaspoon of curry powder
- A teaspoon of cumin;
- A teaspoon or tablespoon of honey (here for your taste);
- A couple of tablespoons of apple cider vinegar;
- Four to five spoons of oil, ideally olive;
- Some green onions and parsley;
- Salt and pepper to taste.
How we cook:
First of all, bake the beets. You can - in foil in the oven, you can - in the microwave (do not forget to prick it in several places, otherwise it will explode).
While the beets are cooling, cook the lentils. We wash it, if it is gray, you can soak it beforehand.
Heat a spoonful of oil in a skillet and add lentils, cumin and curry powder there. Fry for a few minutes, then fill with broth or water and leave to cook until tender. Readiness in our case is not porridge, but separately grains, who like it - al dente.
If the water is not completely absorbed, drain. Let the lentils cool.
Cut the beets into small cubes, chop green onions and parsley. Mix together a dressing of mustard, honey, vinegar, three tablespoons of olive oil, salt and pepper. It is necessary that it (dressing) become homogeneous, so the easiest way is to mix all the ingredients in a small jar with a lid and shake it well.
Now mix the lentils with the beets, add the green onions, parsley and pour over the dressing.
