One of our favorite recipes is meat pancakes. I usually cook them with chicken pieces. But one day I decided to replace the chicken with pollock. And I really liked it! It turned out to be both more budgetary and tastier. Now I even cook such pancakes for the festive table. Unusual and delicious!

HOW TO COOK:
I clean the fish and put it in boiled salted water. Bring to a boil again and cook for about 3 minutes. Then I put it on a plate.
When it cools down a little, I take the fish apart and, of course, remove all the bones.
Chop the onion finely. I leave about a third part, and fry the rest of the onion in a small amount of vegetable oil.
In a bowl I combine pieces of fish, fried and fresh onions, eggs, mayonnaise and flour. Salt and add spices.
Spices are always to your taste. Today I took black pepper, a pinch of oregano, some nutmeg, and ground coriander. But you can experiment with spices!
I mix everything and put it in the refrigerator for at least 2 hours. You can fry right away, but it turns out tastier if the dough still stands. You can store this mixture in the refrigerator for up to two days. It is very convenient when I am preparing for the arrival of guests.
I add mayonnaise to the dough! I cook the mayonnaise myself. How I do it, I have already told many times. At the end of the article, I will leave a link to a video with several homemade mayonnaise recipes. You can, of course, if you wish, replace mayonnaise with sour cream, but with mayonnaise it tastes better!
By the way, I often add flour before frying. Or you can, for example, add 2 tablespoons directly to the dough. flour and one or two more spoons before sending the dough to the pan.
I fry the pancakes in oil on both sides until a beautiful golden brown crust. Average fire.
I put the finished pancakes on a paper towel to remove excess oil.
RECIPE:
• Pollock - 2 pcs. (~ 600 g)
• Onions - 1-2 pcs.
• Eggs - 3 pcs.
• Mayonnaise - 2-3 tbsp.
• Flour - 3 tbsp.
• Spices
• Salt
