A simple and delicious homemade cookie cutter cake without baking. It is very easy and fairly quick to prepare in just 30 minutes, plus 2-3 hours for solidification. However, if you want to make this cake more festive and beautiful, then you will need to spend about half an hour on a beautiful decoration.
I suggest decorating the cake with oranges in jelly. But you can also use other berries or fruits, such as canned peaches. Jelly can also be taken in any flavor that suits the selected fruit.
The cake is very tasty and tender. Sour cream is in perfect harmony with sweet crackers and fruit pieces. This no-bake cake is perfect for homemade tea and a quiet family celebration. And he prepares so simply that even a child can handle it!
Try it, it's very simple and surprisingly delicious!

Ingredients:

  • biscuits (cracker) - 300-350 g
  • sour cream 15% - 500 g
  • sugar - 1 tbsp.
  • orange - 2 pcs. (can be replaced with cherries, raisins, banana, etc.)
  • gelatin - 15 g
  • water - 100 g

To decorate:

  • orange - 1 pc.
  • orange jelly - 1 pack
  • water - 200 g (half of the volume indicated on the jelly pack)

Step by step recipe

1. First you need to decide on the container in which you will pour the cake. This can be a saucepan or bowl. In my case, this is a saucepan. Pour all the cracker into it and make sure that at least 3 cm remains to the top. The entire volume that remains will be filled with more jelly and sour cream.

2. Pour one pack of jelly with orange peel into a saucepan and pour 200 ml of water. Mix well. Let the jelly stand for 10-15 minutes, so that the gelatin swells in it.

3. We also fill instant gelatin with water at the rate of 100 ml of water per 15 g of gelatin. Stir well and also let it brew so that the gelatin swells.

4. Preparing the cream.
Pour sour cream into a bowl and add sugar to it. Stir well. Since sugar does not dissolve in sour cream immediately, this mixture should be allowed to stand for 10-15 minutes.

5. While the gelatin swells and the sugar dissolves in the sour cream, prepare the oranges.
Cut one orange in half and cut it into thin slices using a slicer. If you don't have a slicer, you can slice the orange thinly with a knife.

6. Peel off the peel from the remaining two oranges and cut them into pieces. If there are seeds in the oranges, then they must be removed.

7. The jelly is already swollen, we put it on the stove. Heat the jelly, stirring occasionally, until it becomes smooth. In no case should you boil jelly, so all the gelling properties will disappear.
Pour a little more than half of the jelly into the pan in which we will collect the cake. Put the pan with jelly in the refrigerator for 10-15 minutes, so that the jelly hardens.

8. The jelly stood in the refrigerator for 10 minutes and completely solidified.
Put the oranges beautifully on the jelly. Instead of an orange, you can take, for example, a canned peach.
Fill the oranges with the remaining jelly and put in the refrigerator for 10 minutes so that the jelly hardens.

9. After 10 minutes, the jelly is completely frozen. The cake decoration is ready. If you don’t have half an hour to make such a decoration, then you don’t need to do it. Start immediately preparing the cake itself. At the end, you can decorate it with just grated chocolate.

10. Let's start making the cake.
The gelatin is already completely swollen. We put it on fire and drown it. We look carefully so that the gelatin does not boil.
Pour the melted gelatin into a mixture of sour cream and sugar. Mix everything well.

11. Pour the cracker and chopped oranges into the sour cream mixture. Mix everything well.

12. Carefully lay out the mixture of cracker and sour cream on a layer of jelly. We try to lay out in such a way as to fill all the voids.
Set the pan with the cake to freeze in the refrigerator for at least 2 hours.

13. To get the cake out of the mold, pour hot water into a bowl. The water temperature is about 70 degrees. We put a pan with a cake in this water for 10-15 seconds. You don't need to keep it any longer, as the jelly will melt and pour out.
Cover the saucepan with a plate, on which we will serve the cake on the table, and turn everything over. Carefully remove the pan from the cake.

Here is such a cracker cake with sour cream I got. I decorated it with oranges in jelly. If you do not have time for such a decoration, then you can simply sprinkle this cake with coconut or grated chocolate and put any berries and fruits of your choice on top.
