A very tasty, satisfying and harmonious salad "Masherovsky" will become a real competitor to Olivier at the festive table. This salad is of Belarusian origin. They say that Peter Masherov himself, the first secretary of the Central Committee of the Communist Party of Belarus, was very fond of eating it. Hence its name - "Masherovsky".
In this salad, chicken meat, pickled mushrooms and cucumbers are in perfect harmony with each other. Fried onions and carrots add a special flavor. By the way, instead of pickled mushrooms, you can add fried champignons to this salad. For more flavor and piquancy, I like to fry the chicken breast in spices. But you can also use just boiled fillet. If you want to reduce the amount of fat in the salad, you can also boil the carrots and pickle the onions.

This salad is delicious and everyone loves it. It is perfect for a festive table and for a weekend dinner for the whole family.

Ingredients:

  • pickled mushrooms (honey agarics, champignons) - 350 g
  • chicken fillet - 300 g
  • boiled eggs - 3 pcs.
  • onions - 2 pcs.
  • carrots - 2 pcs.
  • pickled cucumber - 2 pcs.
  • mayonnaise - 2 tbsp. l.
  • salt to taste
  • ground black pepper - to taste

Step by step recipe

1. First, prepare the meat for the salad.
We take 300 g of chicken fillet, wash and dry with paper towels. Salt the meat on all sides and sprinkle with curry. We rub everything well over the meat with our hands.

2. Put the prepared fillet in a preheated pan with vegetable oil. Fry over high heat until golden brown for about 2 minutes, first on one side and then on the other.

3. When the meat is fried on both sides, pour half a glass of boiling water into the pan and cover it with a lid. Reduce the heat to a minimum and simmer the fillets under the lid for about 15-20 minutes.
The fillet is already ready, take it out of the pan and let it cool slightly.

4. Cut two small onions into cubes.
Put the prepared onion in a frying pan and sauté until golden brown.

5. Cut two carrots into small cubes. We also put the carrots in the pan and sauté until the carrots are soft. In time, it takes about 5-7 minutes.

6. We also cut two pickled cucumbers into cubes.
Cut 350 g of pickled mushrooms into smaller pieces. Instead of honey mushrooms, you can use any other canned mushrooms. You can also fry the mushrooms.

7. Cut the cooled chicken fillet first lengthwise into plates, and then cut into small cubes.
Cut 3 boiled eggs into cubes.

8. Put prepared chicken fillet, chopped cucumbers, sauteed carrots, eggs, onions and mushrooms in a large bowl.
Salt and pepper everything to taste.
Season the salad with 2 tbsp. mayonnaise. We mix everything.
The salad is ready, you can serve it on the table.

Masherovsky salad turned out to be very tasty and satisfying. All ingredients are perfectly combined in such a salad. This salad is so delicious that it can be safely replaced with Olivier on the festive table.
