At your request - "counting room" in text format. Thanks to everyone who supported my new column! I am always glad to receive comments with feedback, suggestions and remarks.
I will cook and count right away.
I bought groceries at the nearest chain supermarket, St. Krasnodar (prices at the end of July 2021) Of course, I am interested in prices in other regions - write in the comments, we will compare!
For the recipe, I need 900 g of potatoes. Peel the potatoes and boil them in salted water (the salt needs about 10 cents).
While the potatoes are boiling, I chop the onion (about 300 g) into small cubes. This is for the filling.
And fry the onions in vegetable oil until golden brown. I take about 2 tablespoons of oil.
When the potatoes are ready, I pour the broth into some container and let it cool to room temperature. The dough on potato broth turns out to be the most tender! If you haven't tried it, I highly recommend it! The pies are soft and do not stale for a long time!
Mash potatoes in mashed potatoes (along with fried onions).
For the test, I take 500 ml of cooled potato broth, add 0.5 tsp. salt, 2 tbsp. sugar and 3 tbsp. vegetable oil. I stir it.
In a separate container I combine the sifted flour and yeast (it should be written on the bag that the yeast is added directly to the flour). I have a bag of 11 g. You can, of course, use compressed yeast, but then you need to dilute them in warm potato broth (then I take about 40 g of yeast).
I pour the potato broth into a bowl of flour and knead the dough. I don't add all the flour at once! I add it gradually, so as not to clog the dough with flour. Usually it takes me about 700 g of flour. But it may take less and more than this amount! Everything depends on flour. To prevent the dough from taking on excess flour, I grease my hands with oil when I knead the dough.
When the dough no longer sticks to my hands, I put it in a greased container (here are my husband's hands), cover towel and leave in a warm place for about 40 minutes (the dough should increase in volume by about 2 times). I usually put a bowl of dough in the oven and turn on the light)
When the dough has risen, I knead it, divide it into pieces and sculpt pies. I leave the pies under the towel for another 15-20 minutes to rise.
It remains to fry in oil on both sides until golden brown. Or you can bake it in the oven at 180 degrees. I usually fry - it tastes better! This dough is just perfect for fried cakes. It almost does not take in oil. the pies are delicious!
These are such beautiful pies:
And you can already calculate what happens. Cost of products for the test: 52.93 rubles. + filling 63.32 rubles. And it turns out that I spent 116.25 rubles on the preparation of pies from the specified number of ingredients. But this is the cost of 2.5 kg of pies.
Total: I spent 46.50 rubles for 1 kg of pies. If you add the cost of electricity and water here, you get about 50 rubles / kg
Do you think it is expensive or cheap? Write about it in the comments. And of course, share your recipe reviews and food prices in your area.
