It perfectly combines chocolate sponge cake, delicate custard and prune pieces with chocolate icing. And the impregnation with aromatic cognac adds an amazing touch to this dessert. However, you don't need to add cognac, it will also be delicious.
Preparing this cake with chocolate icing and prunes is not difficult. And the products are all simple and affordable. Even a novice cook can cook it.
Such a dessert will decorate not only a home-made tea party, but it will also look appropriate on a festive table.

Ingredients:

Biscuit:

  • sugar - 150 g
  • eggs - 4 pcs.
  • flour - 110 g
  • cocoa - 15 g
  • baking powder for dough - 1.5 tsp l.

Custard:

  • milk - 500 ml
  • butter - 250 g
  • yolks - 2 pcs.
  • sugar - 4 tbsp. l.
  • flour - 3 tbsp. l.
  • starch - 2 tbsp. l.
  • vanilla sugar - 15 g
  • dried prunes - 400 g

Glaze:

  • milk chocolate (black) - 100 g
  • butter - 70 g

Step by step recipe

Cooking a biscuit

1. First, let's make a biscuit.
Divide 4 eggs into yolk and white.
Beat the whites with a mixer gradually adding 150 g of sugar. Beat for about 5 minutes, you should get a fluffy, stable foam.

2. Add 4 yolks one by one to this mass, while constantly beating with a mixer.

3. Pour 110 g of flour, 15 g of cocoa powder and 1.5 tsp into a sieve. baking powder.
Sift the flour mixture into the egg mass in several approaches. Gently knead the dough with a spatula or spoon. The dough should not fall, but should be airy and light.

4. Transfer the prepared dough into a mold covered with parchment paper. Distribute it evenly over the entire form. The size of my form is 26 by 26 cm.

5. We put the dough in the oven preheated to 180 degrees. We bake for about 15-20 minutes.

Cooking the custard

6. Now let's make the custard.
Pour half a liter of milk into a saucepan and put on fire.

7. While the milk is boiling, prepare the rest of the cream.
Pour 2 yolks into a bowl and begin to beat with a mixer. Gradually add 4 tablespoons to the yolks. sugar and 15 g of vanilla sugar. Beat everything until whitening and an increase in mass in volume.

8. Pour 2 tbsp into the resulting yolk mixture. l. starch, I have potato starch, but you can take corn starch. And add 3 tbsp. l. flour.
Mix everything with a mixer.

9. The milk has already boiled, gradually pour it into the prepared mass and mix until smooth.

10. Pour the resulting mixture back into the saucepan and place on the stove. Cook the cream over low heat, stirring constantly. It is very important to constantly stir the cream, as it can burn to the bottom during cooking. Cook the cream until thick, it took me 2.5 minutes.
Cover the finished cream with a lid and leave it at room temperature to cool completely.

11. The custard base has cooled down, we continue to prepare the cream.
Put 250 g of butter at room temperature in a bowl. Beat the butter with a mixer until whitening and increase in volume.

12. Add one tablespoon of the well-cooled custard base to the whipped butter, whisking the cream well each time. If you add the entire custard base to the oil at once, then the cream will turn out to be not so lush and airy.

Cooking syrup for impregnation

13. Cooking syrup for biscuit impregnation.
Pour half a glass of water into a saucepan and pour half a glass of sugar. We put everything on the stove. Bring to a boil and simmer for one minute. Let the prepared syrup cool.

14. Pour 50 g of brandy into the cooled syrup. We mix everything. If desired, cognac can be omitted.

We fold the cake

15. Remove the baked and already cooled biscuit from the mold. Remove the top crust from the biscuit.
Soak the biscuit very well with sugar syrup.

16. Put the prepared custard on top of the biscuit and gently smooth it over the entire surface.

17. For the cake, you need 400 g of dried prunes. First you need to wash it and pour boiling water over it for 10-15 minutes.
Drain the water from the prune and dry it with paper towels.
Cut the prepared prunes into smaller pieces.

18. Put the prune pieces evenly on the cream.

Cooking chocolate icing

19. Cooking chocolate icing for the cake.
Put 100 g of black or milk chocolate, broken with pieces, into a bowl and add 70 g of butter to it. We put everything on a water bath.

20. We heat the chocolate with butter, stirring occasionally. Be careful not to overheat the chocolate and make sure that no water or condensation gets into it. When most of the chocolate has melted, remove it from the water bath and continue stirring until the chocolate and butter are completely melted.
Let the chocolate glaze cool to about 25 degrees so that it does not pour too much.

21. Pour the cake with a slightly cooled icing on top with a spoon.
We put everything in the refrigerator for at least 2 hours, so that everything is well frozen and stabilized.

Cut the cooled cake into portions and serve.
The cake with prunes turned out to be very tasty, appetizing and beautiful. This cake perfectly combines aromatic prunes, chocolate and delicate custard.
