There is, of course, a peculiarity. Each ingredient is fried or baked separately, and then mixed, as if marrying, in one bowl for 5 minutes. And the taste from this turns out to be extraordinary!
Served as the main hot lean dish (side dish) or as a cold appetizer for boiled potatoes.

Ingredients:
- eggplant
- zucchini
- tomatoes
- bell pepper
- onion
- dried or fresh basil
- greens (dill, cilantro, parsley)
- garlic
- bitter or hot peppers
- salt
- vegetable oil
- seasonings for oriental dishes (for shurpa, for example)
How to cook:
1. Wash and clean any food you need.
2. Cut the eggplant into slices and soak in salted water for about 10 minutes. Then drain the water.
3. Zucchini, preferably young, also cut into thick circles. Do not salt, do not bread in flour.
Dry each circle with napkins.
4. Peel Bulgarian peppers from seeds, rinse. To cut in half.
If they are very large and with thick walls, then again in half. That is, into four parts.
5. Onions without husks are cut into thin half rings or strips.
6. Divide the tomatoes, beautiful and juicy, into wedges.
7. Further, each type of vegetables, except for tomatoes and onions, must be fried in vegetable oil. Separately.
Then the eggplant.
And peppers.
8. Combine the fried vegetables in a cauldron or saucepan, add onions, hot pepper pods, seasonings, tomatoes and garlic to taste.
Important! Stir 1 time! Tomatoes should not be boiled, they will come to readiness from the hot vegetables themselves. Salt everything together while stirring.
9. Cover the dish with a lid and leave for 5 minutes on the lowest heat so that all flavors and aromas are mixed.
Serve the finished stew hot or as it cools.
