I have already written about the so-called off-road bread, and today we will talk about... truffle oil.
I remember that I mentioned it a couple of times as not a very expedient purchase, and both times I received indignant comments - they say, you don't understand anything about sausage scraps... Ugh, aristocratic food. In the same place TRUFFLES!!! This is super! It's a duper! This is only for true gourmets.
So, ladies and gentlemen... In truffle oil, if we are talking about more or less affordable (that is, about that which can be found in online stores and regular stores, say, up to 2,000 rubles for a small bottle) in the vast majority of cases, no truffles observed. Sometimes a slice of a truffle can float - for beauty and for the customer to be thrilled - a delicacy purchased.
But chemical compounds are responsible for the aroma of this oil (just don't grab your heart when you read the list)
- dimethyl sulphide,
- 2,4-dithiapentane (generally referred to as truffle sulfide)
- 2,4,6-trithiaheptane,
- androstenol (5-alpha-androst-16-ene-3-alpha-ol)
Whether there will be one or more flavoring agents depends on the manufacturer. The more types of flavors, the deeper the aroma of the oil will be. If you use one flavoring agent, then the flavor will turn out to be flatter.
By the way, in addition to truffle oil, sulfides used to delight (and maybe even now) in the aroma of gas - they were added in order to definitely notice a leak ...
So the “ponty” of the delicacy is highly doubtful. Fragrance - yes. A rare delicacy - no.

However, there are types of oil that are really flavored not only by chemical compounds, but also by mushrooms. However, their cost is much higher, and the truffles there are not at all the winter ones, the price and aroma of which are sky-high, but summer ones. They are not considered so delicious. like winter.
In such oil, the percentage of truffles will be indicated. But! In order for this oil to have at least some taste and aroma, the content of the truffle mass in it must be at least 10 percent, the rest - only for a person to think - ohh, truffle. That is, too - for the sake of show-off. Often oils with a low percentage of summer truffles (or rather, their scrap and waste) are also flavored with flavorings.
