✨ No need to preheat the oven and beat the eggs thoroughly until fluffy. Everything is prepared in a matter of minutes! 🥰

After baking, the curd dough turns out to be the most delicate, sweet and sour and is in perfect harmony with any sweet filling. Today I have strawberry jam, but with the same success you can use boiled condensed milk, any jam, sour cream or custard, etc.

📕 To prepare a roll you will need: 🥙

Cottage cheese (any fat content and consistency) - 180 g
Selected chicken eggs - 3 pcs.
Granulated sugar - 3 tbsp. l.
Wheat flour - 2.5 tbsp. l.
Baking powder - 1 tsp l.
Vanillin - a pinch
Refined sunflower oil - 1 tbsp l.
Jam - for filling

👨🏻‍🍳 Let's start cooking... ⤵️⤵️⤵️

We take a deep bowl, break eggs into it, put cottage cheese. We also add sugar and vanillin. Note that curd does not require additional wiping. You can take both a pasty and a granular product - the result will be equally tasty and tender.

We punch everything with a hand blender. The result is an airy, but rather liquid and almost homogeneous mass. Pour oil into it, pour flour (of course, sift it first) and baking powder.

Once again we “go through” the dough with a blender to destroy all the flour lumps. The mass will turn out to be slightly thicker than the traditional pancake dough.

Lubricate the pan with a thin layer of vegetable oil using a cooking brush, heat up and pour out about half of the total amount of dough. The diameter of the pan should be at least 24 cm, ideally 26-28. Then the roll will be formed as needed - it will not break and unfold. Bake over medium-low heat, covered for about 5 minutes.

During this time, the bottom side of the "cake" should become light brown, and the top should become dull, elastic, without damp areas.

Of course, it is ideal to bake both cakes at the same time. But if you only have one pan of this diameter, remove the first crust from it and cover it with plastic wrap / clean towel. This is necessary so that the tender dough does not dry out while it "waits" for the second pancake to be ready. Lubricate both cottage cheese cakes with jam. I just smeared the bottom one with syrup, and on the top one I also put the crushed berries.

And gently roll it into a roll. The cakes are quite soft and pliable, so they should not break.

That's all. It remains only to cut the roll and serve it for breakfast or dessert. Very fast, affordable and easy-to-prepare baked goods.
