Without undue modesty, I will say that in cooking pancakes I
a real master. My grandmother taught me this as a child, passed on all the secrets. I always get them tasty, fluffy and moderately sweet, but because of frying in oil, they cannot be called useful. Not so long ago I found an interesting recipe that was appreciated by all my "eaters", the pancakes are not greasy, fluffy, and even with filling.
So let's go! The basis for the dough is oatmeal, and this is another plus of this recipe - part of the flour is replaced with cereals, which have a lower glycemic index and contain fiber. I use regular, not instant ones. I pour the flakes with milk and leave them on the table for 10-15 minutes.
Then I add eggs, salt, vanilla sugar, a little vegetable or melted butter to the soaked flakes. Mix well and add flour and baking powder. The dough must be mixed well again and the filling can be added.
It can be berries, pears, or, like mine, apples. I cut the apple into small cubes and send it to the dough. It will be interesting to add some dried fruits, such as raisins, then the amount of sugar can be reduced.
The dough should no longer be ignored, we immediately bake the pancakes. I put the dough in a nonstick skillet, two tablespoons for one pancake.
I fry the pancakes for 2-3 minutes on each side. Serve such pancakes with yogurt or honey.
