A very good eggplant recipe in the oven. These eggplants with minced meat are perfect for every day. On the festive table, they will also look beautiful. They are delicious both warm and cold. These eggplants baked with minced meat under vegetable sauce are very aromatic and tasty. The recipe is quite simple to prepare, and the products are more than affordable. This recipe is practically fat-free and without pre-frying the eggplant. So it will also appeal to those who follow the figure.

Ingredients:
- eggplant - 1 kg
- minced meat - 800 g
- tomatoes - 500 g
- sweet red pepper - 1 pc.
- onions - 2 pcs.
- marjoram - 1 tsp l.
- parsley - 1 bunch
- ground black pepper - to taste
- salt to taste
Step by step recipe
1. Cut a kilogram of eggplants into slices about 8 mm thick. Put the chopped eggplants in a bowl, salt with about 2 tbsp. l. salt and mix well so that each circle is salted. Leave the eggplants for about 20 minutes to let the juice start.
2. Cut two onions into small cubes.
Cut one large red bell pepper into cubes too.
3. Cut about half a kilogram of tomatoes into large pieces. Chop the tomatoes in a chopper or blender. You can also grate tomatoes on a coarse grater.
4. Chop a bunch of parsley.
5. Put half of all the chopped onions in a hot pan with a little vegetable oil. Fry over medium heat until golden brown.
Add chopped red bell peppers to the fried onions.
6. Fry everything over medium heat, stirring occasionally for about 5 minutes. After 5 minutes, pour the chopped tomatoes into the pepper and onions.
7. Mix everything well, cover with a lid and simmer for another 5 minutes. At the end, salt everything, add 1 tsp. l. dried marjoram, pepper, put the chopped parsley and stir.
8. Take 800 g of ground pork and add the remaining chopped onion. Salt the minced meat to taste and pepper. Mix everything well.
9. We make small flat cutlets from minced meat, about the same size as eggplant slices.
10. Drain the liquid from the eggplants and put them in a round baking dish, alternating with minced meat patties. Pre-grease the form with vegetable oil. The diameter of my mold is 24 cm.
Put the stewed vegetables on top of the eggplants with minced meat.
11. Cover the baking dish with a lid or foil.
We put in a preheated oven to 180 degrees. We bake for about 50 minutes.
The eggplants with minced meat turned out to be fragrant, tender and very tasty. They can be served as an independent dish or with spaghetti, rice, potatoes. Be sure to prepare such a dish during eggplant season.
