Throughout my "culinary" life, I have cooked various pastries with apples and among the pies I select the "Irish" one, because it is incredibly tasty, very apple and fragrant. It is served with vanilla sauce, which not only decorates it and makes it more festive, but also makes the taste richer. In general, I recommend it to everyone who loves pastries with apples.
I usually start off by mixing all the dry ingredients, namely flour (I use wheat white and whole grain), baking powder, and cinnamon. You can also add lemon zest and dry ginger if you wish. I mix everything well and start preparing the apples.
My garden apples are small, I cut them into small cubes and sprinkle with lemon juice.
Now you can finish preparing the dough. To do this, grind butter at room temperature with sugar and add two eggs and milk.
Mix the eggs well and then add the dry ingredients in two portions.
The dough should turn out to be quite thick as in the photo below:
Then we send the prepared apples into the dough and mix, it will not be easy ...
Now it remains to transfer the dough into a baking dish and send it to bake in the oven at 180 degrees for about 40 minutes. The readiness of the cake must be checked with a toothpick.
In the meantime, the pie "sits" in the oven, you can prepare the sauce. To do this, put the cream mixed with milk to warm up on the fire, it is important not to bring them to a boil. And in a separate bowl, grind the yolks with vanilla sugar into a homogeneous mass. Then, when the milk mixture is already hot enough, add a little to it in the yolk mass, stirring constantly with a whisk, so that the yolks do not turn into an omelet. Next, we return the milk-yolk mass back to the pan and put on a low heat, and stir constantly, the mass should thicken. How to check if the sauce is ready? Just dip a wooden spoon in the sauce and slide your finger, there should be a clean line, the sauce should not flow.
Pour the prepared sauce into another dish and cover with foil until contact, cool.
When both the pie and the sauce are ready and cool a little, you can pour tea, invite everyone to the table and treat them to the pie.

- 240 g flour (160 g regular wheat + 80 g whole grain)
- 7 g baking powder
- 1/2 tsp l. ground cinnamon
- 120 g butter at room temperature
- 120 g sugar
- 2 eggs at room temperature
- 60 ml milk at room temperature
- for the sauce: 100 g milk, 100 g cream, 2 yolks, 40 g vanilla sugar
