✅👌 Puff pastry is famous for its capriciousness and complexity. To prepare it, you need to do a lot of rolling, folding, and in the interval between them - let the workpiece cool well.

But I want to offer you an alternative way of making puff pastries.

I cook puff pastries instead of bread: and for this it is not necessary to roll out the dough for a long time and make many folds

📕To make cakes you will need: 🥙

For the test:
Chicken egg - 1 pc.
Salt - 1 tsp l.
Water - 300 ml
Wheat flour - 500 g.
For lubrication:
Butter - 150 g
Sunflower oil - 100 ml.
Filling:
greens (whichever you prefer) - a bunch

I cooked half a portion, but in general, from this amount of products, 4 large tortillas or 6 medium ones are obtained. Focus on the diameter of your pan. So, let's start by making the dough. Pour the flour into a convenient deep bowl, add the egg and salt.

We heat the water to about 70 degrees. We need just hot liquid, not steep boiling water. Slowly pour it into a bowl of flour, while stirring the dough with a fork or spatula.

The finished dough will be soft. It is possible that it will stick to your hands, but for now, no more flour needs to be added. After rest, it will become more pliable and elastic. Round the dough and cover with cling film or a clean waffle towel. For now, set aside for 20-25 minutes.

In the meantime, let's prepare the filling. Finely chop a small bunch of your favorite greens. I had dill, parsley and a couple of green onion feathers. You can also add cilantro, basil. If an option is also sweet filling - powdered sugar. It is necessary to sprinkle it on the dough when forming cakes instead of greens.

Then we make a mixture of oils. Everything is simple here. It is necessary to melt the butter (in the microwave or on the stove), cool it to room temperature, add the vegetable oil and mix everything. Done, you can form cakes if the dough has already lain for the allotted time.

Divide the dough into 4 parts for easy rolling. If you have a spacious work surface, then you can cut it into 2 pieces. Cover the pieces that we are not working with yet with cling film so that the surface does not dry out.

Sprinkle flour on the table and roll out a piece of dough as thin as possible.

Lubricate it with a mixture of oils and sprinkle with herbs or powdered sugar.

Roll out the second piece of dough and cover the filling with it. We try to match the edges of the layers.

Cut into 4-5 strips of approximately the same width.

Twist the first strip into a tight roll. Then we wind the second strip on it. Thus, 3-4 strips can be used for 1 cake.

Here's what you end up with. We repeat the procedure in the same sequence with the whole dough and all the filling. The oil mixture will remain, we will need it for frying the cakes.

Gently roll out each workpiece to the diameter of the pan (a little less possible).

Pour some of the oil mixture into the pan and heat it up. We spread the cake. Fry over medium heat until golden brown.

Turn over several times so that each side is baked evenly.

Transfer the finished cakes to a paper towel so that the excess oil is absorbed. Then serve until cool. The scones are crispy, flaky and very flavorful. An excellent substitute for traditional bread.
