Eggplant baked in the oven
I washed the eggplants, dried them and cut them lengthwise into 2 parts.
Cut the inside of the eggplants about 1-1.5 cm deep to form diamonds.
Salt and brush with olive or vegetable oil.
Turn on the oven 180 ° C degrees and you can bake the eggplant right away.
I will pre-fry them in a pan until golden brown, and then put them in the oven until tender.
I have 150 grams of quinoa. One volume of quinoa requires two volumes of water. Rinse the groats well and let the water drain.
Finely chop onions and carrots, also bell peppers.
Chop the peeled tomatoes and add half the hot pepper.
Place a stewing pot on the stove and add a couple tablespoons of olive oil.
Preheat the pan and add half the chopped onion and grate 1 clove of garlic. Saute the onions until golden and add half a teaspoon of cumin seeds.
I spread the quinoa, add salt and a full cup of boiling water. Bring it to a boil, reduce heat and close the lid. I leave it for 10-15 minutes.
While you can make tomato sauce for this dish.
Heat vegetable oil in a frying pan and add the second half of the onion and grate a clove of garlic here as well. If you have fresh thyme, add a couple of sprigs.
Add carrots, followed by sweet and hot peppers. Then 100 ml of white wine and let it evaporate for a couple of minutes. Wine can be substituted with broth or water.
Simmer until vegetables are cooked. When the vegetables are ready, add the tomatoes and season with salt and pepper.
When the excess liquid has evaporated, cover the pan with a lid and simmer for another five minutes. That's all.
