This chocolate cake is not too difficult to prepare. The recipe is based on a sponge cake "Chocolate on boiling water". According to this recipe, it turns out to be richly chocolate and moist, it does not require impregnation. And most importantly, it always works for everyone. It can be used as a basis for other cakes as well. Creamy curd cream will also not cause you any difficulty. And you can decorate such a chocolate cake to your liking.

Ingredients:

Biscuit "Chocolate on boiling water":

  • flour - 2.5 tbsp.
  • sugar - 2 tbsp.
  • eggs - 2 pcs.
  • cocoa powder - 8 tbsp. l.
  • milk - 1 tbsp.
  • refined sunflower oil - 1/2 tbsp.
  • boiling water - 1 tbsp.
  • soda - 1.5 tsp l.
  • baking powder for dough - 1.5 tsp l.

Cream:

  • cream (at least 30% fat) - 1 tbsp.
  • cottage cheese - 200 g
  • canned cherries - 1 can (0.5 l)
  • sugar - 180 g
  • sour cream - 2 tbsp. l.
  • gelatin - 15 g
  • water - 60 ml

Chocolate glaze:

  • chocolate - 100 g
  • cream (at least 20% fat) - 50 g

Decoration:

  • Oreo cookies
  • Snickers bar
  • blueberries

Step by step recipe

Cooking a sponge cake "Chocolate on boiling water"

1. Let's start with baking a chocolate sponge cake. Pour all the dry ingredients into one bowl: sugar, flour, cocoa, soda and baking powder. We mix everything.

2. Break two eggs into the second bowl and beat them a little.

3. Add odorless milk and sunflower oil to the beaten eggs. Beat a little again.

4. Pour the contents of the second bowl into the dry mixture, stirring with a mixer. You will not be able to knead the dough until the end, as the mixture will become very thick.

5. At this moment, pour in a glass of boiling water. We continue to beat the dough until smooth.

6. Pour the dough into a baking dish, the bottom of which is covered with parchment paper. Mold diameter 21 cm.
Bake the sponge cake in an oven preheated to 180 degrees for about 80-90 minutes.

Cooking cream

7. Now let's start preparing the cream. Pour gelatin with water, mix and leave to swell.

8. Put cottage cheese in the chopper bowl, pour half the sugar and add 2 tbsp. l. sour cream. Grind to a homogeneous pasty mass.

9. Pour cold cream into the mixer bowl. Begin to beat the cream at a low mixer speed. Add the remaining sugar and continue to beat, gradually increasing the mixer speed to maximum. The cream should expand in volume.

10. While the cream is whipping, melt the swollen gelatin. We heat it up to about 50-60 degrees. You cannot boil gelatin, otherwise it will lose its gelling properties.

11. Add chopped cottage cheese to the whipped cream. We turn on the mixer at medium speed and add melted gelatin to the cream and cottage cheese in a thin stream. Once all the ingredients have been mixed, the cream is ready.

We fold the cake

12. We begin to fold the cake. Cut the cooled biscuit into three identical cakes. We do not need the upper part of the biscuit.
Since the cake will be higher than the mold, you need to put a side made of acetate film. Or use a cut plastic file folder, as I did. Put a biscuit on the bottom of the mold.

13. Pour a fourth of the cream onto the biscuit and distribute it evenly. Put canned cherries on the cream. Cherries must first be thrown onto a sieve to get rid of excess liquid.
Pour cream on top of the cherry again and distribute it.

14. Put in the second cake and pour out the cream again. Put the cherries and fill with the remaining cream.

15. Cover with the third cake. Cover the cake with cling film and refrigerate for at least 6-8 hours.

16. Remove the cooled cake from the mold and place it on a stand.

Cooking chocolate icing

17. Now let's start decorating the cake. First, let's prepare the chocolate icing. We take 100 g of chocolate, add 50 ml of cream to it and set to melt in the microwave. We drown in impulses for 10-15 seconds in 3-4 approaches. Be sure to mix between each approach. Be careful not to overheat the chocolate or it will curdle.

Decorating the cake

18. We transfer part of the glaze to a pastry bag. Cut off the tip and make icing drips on the cake. The cake must be from the fridge.

19. Pour the remaining icing on top and distribute over the cake. Decorate the top of the cake with halves of Oreo cookies, a cut Snickers bar, pieces of chocolate and blueberries.

The cake turned out to be very tasty and harmonious. It perfectly combines rich chocolate sponge cake, airy cream with whipped cream and sweet and sour cherry.
