While autumn is in full swing, and the garden apples are not over yet, I bring to your attention a very interesting recipe for "lightweight" cupcakes. They are lighter because part of the flour is replaced with oatmeal, and part of the sugar for grated apples, and there are also a couple of delicious nuances that make these muffins very, very appetizing.

It is convenient for me to first mix all the dry ingredients, namely flour (you can replace it with whole grain, then the muffins will be even more dietary), oatmeal, baking powder. I add very little cinnamon, literally a whisper, nothing more. Cinnamon will add a light aroma, and will not overwhelm the taste of all other ingredients. I mix everything well and set it aside.

Now let's prepare the base for the test. Beat the egg with a mixer along with sugar, when the mass becomes sufficiently homogeneous, pour the butter into it and continue to beat. Next, I rub the apples on a coarse grater and sprinkle them with lemon juice, but first I remove the zest from the lemon and send it to the dough. The zest will also add flavor and zest to the muffins. I send the apples to the dough and mix well.

I put small sheets of baking paper into a muffin mold and spread out the dough.

While laying out the dough, the idea came to sprinkle the muffins on top with coconut flakes mixed with sugar. The result is a very ruddy crispy crust, very appetizing.

Next, I send the muffins to bake at 180 degrees for about 40-50 minutes.

It turns out to be really cozy autumn pastries. Due to the fact that the cupcakes are in an individual mold, they can be taken with you to work for a snack or on the road.

Ingredients for 6 muffins:

  • 1 large apple
  • 75 grams of oatmeal
  • 75 grams of flour
  • 1 egg
  • 60 grams of sugar
  • 50 ml milk
  • 45 ml vegetable oil
  • A pinch of cinnamon and a pinch of salt
  • Baking powder 0.5 tsp spoons
  • for sprinkling 1 tsp. a spoonful of coconut flakes + 1 tsp. spoonful of sugar
