Stapka-Rashpotka puff cake is a very tasty dessert that is perfect for a family holiday. This cake contains thin flaky cakes and a delicious cream with condensed milk. A layer of jam gives it a special zest. The Stapka-Shredder cake is very similar to everyone's favorite Napoleon, but the technology for making the cakes is much simpler.
Preparing this cake is not too difficult. The only condition is that he needs to be allowed to brew well so that the cakes are not dry.
With such a dessert, you can please your family on a weekend, and put it on the festive table for guests. By the way, you can use any cake jam you like. Or add chopped nuts instead of jam when assembling.
Try this layer cake, it's much easier than it sounds.
Ingredients:
Dough:
- flour - 380 g
- butter - 250 g
- sour cream of any fat content - 200 g
- egg - 1 pc.
Cream:
- condensed milk - 1 can (380 g)
- butter - 300 g
- jam - 150 g
Step by step recipe
Cooking cakes
1. First, prepare the cake dough.
Pour flour into a bowl and put butter at room temperature here. Grind the butter and flour into crumbs.
2. Add one egg and 200 g of sour cream of any fat content to the grated mixture. Mix everything until smooth. The dough should not turn out liquid and gather well into a lump.
3. If the dough is not thick enough, add a little more flour.
4. Wrap the finished dough in plastic wrap and put it in the refrigerator for at least 1 hour.
5. An hour later, we take out the dough from the refrigerator and start baking the cakes. Cut off a small piece of dough and roll it out on parchment paper sprinkled with flour.
Roll out the dough as thin as possible.
6. Cut the rolled dough to the desired size, and remove the excess and use it to roll out the next cake. I make cakes with a diameter of 21 cm.
On top of the cake, be sure to prick with a fork, so that the dough does not rise and flake.
7. We put the cake in the oven, preheated to 180 degrees. We bake for about 10 minutes.
From this portion of the dough, I got 14 cakes with a diameter of 21 cm.
Cooking cream
8. Now let's start preparing the cake cream.
Put softened butter in a bowl and beat it white.
9. Add boiled condensed milk to the whipped butter in several approaches. Beat the cream until smooth.
We fold the cake
10. We begin to fold the cake. We immediately put aside two cakes, we will need them for decoration.
The cooled cakes are smeared with a small amount of cream.
Grease the second, middle and penultimate cake with jam, and apply cream on top of the jam.
Calculate the cream so that 3 tbsp. l. cream left to decorate the cake.
You do not need to grease the top cake with cream.
11. We put a board on the assembled cake, press the cake and put the load on top. In this form, leave the cake at room temperature for about 1 hour.
Then we remove the cargo and send it to the refrigerator for at least 6-8 hours.
12. We take out the present cake from the refrigerator and, if necessary, level the sides, cutting them off with a knife.
With the remaining cream at room temperature, coat the cake on the sides and on top.
13. Grind the two cakes that we set aside earlier into crumbs. Sprinkle the cake on top and on the sides with crushed crumbs.
The cake is ready, you can serve it on the table.
