Recipe for lemon pie on shortcrust pastry with the most delicate filling. Easily replaces the cake on any holiday table.

I know that not everyone loves lemon baked goods, but I just love them. This cake also became my favorite. I hope you enjoy it too. The pie turns out to be very tasty with a slight sourness and citrus tartness, very tasty.

So, I am preparing this pie on a regular shortbread dough, you can use any one, with the addition of sour cream.

I use a square form on baking paper, spread the dough in an even layer about 1 cm thick and pierce with a fork. I send it to an oven preheated to 180 degrees for 20 - 25 minutes.

In the meantime, you can start preparing the filling. To do this, I mix dry ingredients in a bowl, namely flour, sugar and salt. Stir and set aside.

Next, I remove the zest from the lemons and squeeze the juice, all you need is 240 grams. Depending on the juiciness of the lemons, you may need 3 to 5 lemons.

Now add all the juice to the eggs with constant stirring. And notice the dry ingredients and the zest.

Mix everything well and the filling is ready.

At this point, the dough in the oven has already been baked in half and you can pour the resulting mixture on top. We again send the form with the dough and pouring to the oven for 20-30 minutes.

After baking, the cake should be allowed to cool completely.

Can be sprinkled with powdered sugar or coconut. Cut the pie into squares and serve.

Ingredients for the form 35 cm * 35 cm

  • Shortcrust pastry about 250 grams
  • Eggs 4 pcs
  • Lemon juice 240 ml
  • Zest of 4 lemons
  • Sugar 180 grams
  • Flour 80 grams
  • a pinch of salt, vanilla
