Recipe:
fillet - 1 kg
salt -1 tsp
dried garlic - 1 tsp
black pepper - to taste
Prunes -150g
walnuts -150g
mayonnaise -1 tbsp
ketchup -1-2 tbsp
COOKING METHOD
We take meat, for convenience I take a loin, so our task is to make a layer from a piece, we cut it like an accordion, we make an incision on one side, then turn over we make an incision on the other side, I got 3 of these notch.
We unfold, this should turn out to be such a layer, you need to beat it off well so that it becomes smoother and more obedient.
Now salt the meat on both sides with pepper, I add half a tsp for 1 kg of meat. salt, I also add dried garlic. We wrap and set aside.
Let's prepare the filling. Dry walnuts 100 grams in a pan, so they will be more aromatic.
Chop with a knife.
Wash prunes 150 grams, dry and grind with a blender, if dryish prunes need to be poured with hot water and let stand for 15 minutes.
We take the prepared meat layer, distribute the prunes, put the walnuts and wrap a tight roll.
We tie it with threads so that it does not turn around during cooking.
We take a frying pan, by the way, I have a taller frying pan with a diameter of 26 cm, a three-layer non-stick coating, The outer coating is resistant to high temperatures and dirt and retains an excellent appearance for a long time, The thicker base of 4.8 mm ensures uniform heating.
Fry the roll on all sides over high heat until golden brown, this procedure will help seal all the juices in the roll.
Wrap the roll in foil in several layers so that steam does not escape during cooking.
We put in the oven and cook at 200 degrees for 35 minutes.
Mix 1 tbsp. mayonnaise with 1 tablespoon ketchup and add a pinch of dried garlic. Mayonnaise can be replaced with sour cream, ketchup with tomato paste.
35 minutes have passed, we take out the roll, unfold it, remove the threads and coat with mayonnaise and ketchup.
We put it back in the oven and cook for another 10-15 minutes until a golden, appetizing color.
We take it out and serve it hot with any side dish.
