Chocolate shortbread base, the most delicate white yoghurt cream and bright juicy tangerines. What could be tastier on New Year's Eve with a glass of sparkling? And the appearance and cut of this cake with tangerines always evokes delight and a festive mood.
Another indisputable advantage of this cake is that it is prepared without baking. The cooking process itself is not complicated and every housewife can handle it. By the way, this dessert can be safely prepared and decorated on the eve of the holiday, because he needs to be allowed to harden well.

Ingredients (mold diameter 21 cm):

Base for the cake:

  • shortbread chocolate biscuits - 250 g
  • butter - 110 g

Creamy yoghurt layer:

  • plain thick yoghurt - 500 ml
  • cream 30-33% - 250 ml
  • sugar - 180 g
  • water - 100 ml
  • gelatin - 25 g
  • vanilla sugar - 10 g

Filling and decoration:

  • tangerines - 800 g
  • water - 300 ml
  • orange jelly - 1 pack (90 g)

Step by step recipe

Preparing the base for the cake

1. First, let's prepare the base for the cake.
Break 250 g of chocolate shortbread cookies a little and put in a chopper bowl.
Grind everything to small crumbs.
Since my chopper is not large, I chopped the cookies in two passes.

2. Pour the sand crumbs into a bowl. Add 110 g of soft, but not melted butter to this. We mix everything very well so that the oil is evenly distributed over the crumb.

3. We take a baking dish, cover the bottom with parchment paper and put an acetate film on the sides.
Pour the prepared crumb with butter on the bottom of the mold.

4. Spread the crumb evenly over the bottom and ram it with a spoon. To make the bottom more even, it is convenient to use a potato grinder.
Put the mold in the refrigerator to cool.

Prepare tangerines

5. Let's prepare tangerines for the cake.
We clean 800 g of tangerines from the skin and, if necessary, from the white veins. Cut three tangerines in half. 5 more pieces. leave intact

6. We disassemble the rest of the tangerines into slices. Tangerines are preferably pitted and small in size.

7. We take out the form from the refrigerator and place 6 tangerine halves on the sides. We put whole tangerines in the center. In order to press the tangerine halves to the side, we substitute one slice under them.

Cooking cream

8. Pour 25 g of gelatin into a small bowl and pour 100 ml of water. Mix everything and leave to swell for about 10 minutes.

9. Pour 250 ml of cold cream with a fat content of at least 30% into a bowl. Begin to beat at a low mixer speed, gradually increasing it. When the cream begins to thicken a little, gradually pour 180 g of sugar and 10 g of vanilla sugar into them.

10. Whip the cream until thick.

11. Pour 500 ml of thick plain yogurt to the cream. Beat everything again for a short time.

12. The gelatin is already swollen. We dissolve and heat it in the microwave in pulses of 10 seconds up to about 50 degrees, stirring with a spoon after each time. You can also dissolve the gelatin over the lowest heat, stirring occasionally.

13. Pour about 2 tablespoons of the finished creamy yoghurt mass into the dissolved gelatin and mix well.

14. Pour the gelatin mixture into the cream in small portions. Mix everything well with a mixer.

15. Gently pour the prepared cream into a mold over a tablespoon. If you pour out all the cream at once, then the tangerines will move out of place.

16. On top, gently level the cream with a spoon. Put the cake in the refrigerator to freeze.

Decorating the cake

17. Pour 1 pack of orange jelly into a saucepan. Pour in 300 ml of water. Mix everything and leave the gelatin to swell. The pack is designed for 500 ml of water, but to make the jelly stronger, I deliberately reduced the volume of water.

18. The jelly is already swollen, we put it on a small fire. Continuously stirring, heat the jelly until all the gelatin dissolves.
Let the jelly mass cool to room temperature.

19. The creamy yoghurt layer is already frozen. We spread tangerine slices on it in a circle. We imitate a flower.

20. Pour a small part of the jelly onto the tangerines with a spoon. If you pour all the jellies at once, the tangerines will float up and move out of place. We put the cake in the refrigerator to freeze the jelly.

21. The jelly froze and fixed the tangerine wedges. Now pour the rest of the jelly and put it in the refrigerator again until it cools completely for at least 3-4 hours, or better overnight, so that the jelly stabilizes well.

22. The cake is frozen. We remove the form from it and put it on a dish on which we will serve it on the table. Carefully remove the acetate film.

The cake with tangerines without baking turned out to be unusually beautiful. Looking at this cake, the New Year mood immediately comes.
