Ingredients: whole wheat flour, pumpkin (you can use less and add a little water to the dough), banana, salt, soda, Lemon juice to extinguish the soda, Vegetable oil for frying, Honey for soaking
Cooking method:
You can use regular wheat flour, whole wheat flour, and oatmeal (or ground oatmeal) in this recipe. I tried all 3 options, equally tasty.
Grate the pumpkin on a fine grater.
Mash the banana well with a fork and puree. Add to the grated pumpkin. Add a pinch of salt.
Sift flour. Mix well. Quench the soda with lemon juice, add to the dough and stir.
Fry the pancakes in a well-heated skillet with a little oil on both sides. They turn over perfectly, do not fall apart. I fried on one side without a lid, on the other side with a lid.
When the pancakes are ready, you need to grease them with honey, not in a thick layer and lay them on top of each other (it will take about 1 tbsp with a heap of honey for this amount of ingredients). This should be done while the pancakes are warm, the honey will melt on them. I like to eat these pancakes cold. I usually do them in the evening, grease them with honey and put them in the refrigerator.
