If you prefer to cook lighter salads for the holidays, without mayonnaise, then this selection is for you! It contains five recipes for delicious, juicy salads without mayonnaise at once. These are Georgian salad with meat, "Five-minute" salad with balyk, unusual salad "Vkusnyashka" with celery, crispy salad with cabbage and honey agarics, as well as a quick salad of cabbage and corn. All of them are easy to prepare and will be obtained by every housewife. Each of them will worthily take a place not only on your festive table, but also fit into the daily menu.
Georgian salad
Ingredients:
- canned or boiled beans - 1 can (500 ml)
- boiled meat (pork, beef) - 200 g
- sweet pepper (large) - 1 pc.
- red onion (medium) - 1 pc.
- parsley (cilantro) - 1 bunch
- apple cider vinegar - 2 tbsp. l.
- olive oil - 2 tbsp. l.
- garlic - 2 cloves
- salt to taste
- ground black pepper - to taste
Step-by-step cooking recipe:
- Cut one red onion into half rings. If desired, for this salad, onions can be pickled. Cut the boiled meat (pork or beef) into cubes across the fibers. Cut the large bell peppers into strips. Finely chop a large bunch of parsley or cilantro.
- Put chopped peppers, prepared meat, 1 1/2 liter can of canned beans, chopped onion and parsley in a large bowl.
Here we squeeze 2 cloves of garlic through a press. Salt everything to taste and pepper. Season the salad with 2-3 tbsp. apple cider vinegar and about the same amount of olive oil and mix well. - After preparing the salad, it is advisable to let it brew for at least 2 hours, and preferably the whole night in the refrigerator.
- The salad turned out to be very tasty, unusual, and besides, it is easy to prepare.
"Pyatiminutka" salad
Ingredients:
- canned peas - 350 g
- pork balyk - 200 g
- fresh cucumber - 1 pc.
- green onion
- Dill
- thick yogurt - 2 tbsp. l.
- ground black pepper - to taste
- salt to taste
Step-by-step cooking recipe:
- Cut the bean into small pieces. Cut one fresh cucumber into slices, and then into cubes. Finely chop a bunch of green onions and fresh dill.
- Put chopped balyk, cucumber, green onions, dill in a bowl and add 350 g of canned peas. Salt, pepper and season with two tablespoons of thick yogurt (you can season with sour cream or mayonnaise). Mix the salad and serve.
- The salad turned out to be very tasty, light and vitamin.
"Vkusnyashka" salad with celery and beans
Ingredients:
- celery root - 500 g
- canned beans - 1 can (400 ml)
- onion - 1 pc.
- walnuts - 50 g
- parsley - 1 bunch
- lemon juice - 1 tbsp l.
- salt to taste
- sugar
- ground black pepper - to taste
- vegetable oil - for frying
Step-by-step cooking recipe:
- Cut the onion into quarters into rings. Peel the root celery and cut into slices about half a centimeter thick. Cut the celery slices into cubes.
- Pour some vegetable oil into a preheated pan and spread the prepared celery. Fry the celery over high heat, stirring occasionally with a spatula, for about 3-4 minutes, until soft. When the herring is almost ready, put the chopped onion in the pan and fry until the onion is tender. Add a little more vegetable oil as needed. At the end of the celery and onion, salt and pepper well, mix everything and remove from heat.
- While the celery cools down, prepare the rest of the ingredients. Finely chop a medium bunch of parsley. Finely chop 50 g of walnuts with a knife.
- Put prepared celery with onions in a bowl, add one 400 g can of canned beans, add chopped nuts and parsley. Season the salad with about 1 tbsp. lemon juice and mix well. The salad is ready, you can serve it on the table.
- The Vkusnyashka salad with beans and celery turned out to be very tasty and unusual.
Salad with cabbage and pickled mushrooms
Ingredients:
- white cabbage - 700 g
- green onions - 1 large bunch
- carrots - 1 pc.
- fresh parsley - 1 large bunch
- fresh cucumber - 2 pcs.
- canned peas - 1 can (500 ml)
- pickled mushrooms - 1 can (500 ml)
- garlic - 2 cloves
- apple cider vinegar - 3 tbsp. l.
- vegetable oil - 5 tbsp. l.
- ground black pepper
- salt - 1/2 tbsp. l.
Step-by-step cooking recipe:
- Finely chop the white cabbage. Chop a bunch of green onions and a large bunch of parsley. Three large carrots on a coarse grater. Cut two fresh cucumbers into strips.
- Put chopped cabbage, chopped greens, grated carrots, one can of green peas, chopped cucumbers and a can of pickled mushrooms in a bowl. Honey mushrooms can be replaced with any other pickled mushrooms. Squeeze 2 cloves of garlic here through a press. Salad to taste, pepper, pour 3 tbsp. l. apple cider vinegar and season with about 5 tbsp. l. unrefined sunflower oil. Mix everything and serve.
- The salad with cabbage and pickled mushrooms turned out to be very tasty, light and vitamin-rich.
Cabbage and corn salad
Ingredients:
- cabbage - 1/2 head of cabbage
- canned corn - 1 can
- onion - 1 pc.
- carrots - 1 pc.
- dill - 1 bunch
Refueling:
- vegetable oil - 4 tbsp. l.
- lemon juice (apple cider vinegar) - 2 tbsp. l.
- mustard - 1 tsp l.
- salt - 1/2 tsp l.
Step-by-step cooking recipe:
- Finely chop the floor of a medium-sized cabbage with a knife. Put the chopped cabbage into a bowl, add a little salt and crush it with your hands.
- Cut one onion into quarters. Three fresh carrots on a coarse grater. Chop a bunch of dill with a knife.
- Add grated carrots, dill, chopped onions and 1 can of canned corn to a bowl of cabbage.
- Cooking salad dressing. Pour 4 tablespoons into a bowl. vegetable oil, 2 tbsp. lemon juice (or apple cider vinegar). Add about half a teaspoon of salt and 1 tsp. l. mustard. Mix everything until smooth.
- Pour the prepared dressing onto the onion so that it marinates a little. Stir the salad. The salad is ready, you can serve it on the table.
- The cabbage salad with corn is delicious and crunchy. Prepares quickly and turns out a lot of it.
