A wonderful dessert for the New Year's table👌🏻😋
Ingredients: Meringue-cake:, protein, sugar powder, lemon juice, corn starch, Cream:, cream 33%, sugar powder p / in, any fresh berries
Cooking method:
Cooking meringues: Begin to beat the cooled proteins in a dry bowl at a slow speed, gradually increasing to medium (for the whites to whisk well, the dishes must be absolutely dry and not a drop should get into them yolk). Further, in parts under Art. l add sugar powder, without stopping whipping. Then add juice and starch. The mass should be thick and keep its shape, if you turn the container over, it stays in place.
Divide the mass into two parts and spread, forming 2 cakes on a baking sheet covered with good baking paper. We send to the oven to dry the meringue 100 *. We dry for 1.5 hours, if there is no such temperature regime in the oven, set it to a minimum, opening the door ajar and watching. The meringue should not turn yellow. This is the hardest part of this dessert😁. Let the finished cakes cool completely and remove from the paper.
Cream: Whisk well-chilled cream until dense peaks, then add sugar powder a little bit, taste and adjust to your taste.
Putting the dessert: Grease the cake well with cream, lay out the fresh berries, cover with the second cake and press down a little, carefully so as not to break, the meringue is very fragile. Top with the remaining cream, decorate with berries and mint sprigs. Dessert can be kept in the refrigerator for no more than a day, then it loses its gustatory charm.
