Chicken breast with vegetables in sweet and sour sauce #new year

Cooking method:
Prepare the dishes: Frying pan Wok, 3-liter saucepan, a set of metal containers, a set of i-cook knives. Wash the vegetables. Peel the chicken breast of skin and bones (you can use ready-made fillets).
Cut the courgettes and carrots into 0.5 cm thick circles. Peel the bell pepper from the core and seeds, cut into half rings up to 0.5 cm thick. Chop the tomato into pieces less than 0.5 cm (can be chopped in a blender). Cut the onion into quarter-rings 0.5 cm thick. Cut the chicken into approximately 2 * 1 cm pieces.
Put chopped tomato into a metal container (small saucepan), heat over low heat. Add salt, ginger, curry, honey, rice vinegar. Heat until boiling. Then leave on very low heat (should not boil).
Heat the Wok pan over maximum heat, pour 1 tablespoon of vegetable oil. On the second burner, place a 3 liter saucepan over very low heat. Pour carrots into the Wok Pan and fry with continuous stirring for 5-6 minutes. (at the end of frying, the carrots in the middle of each piece retain a firm, slightly crispy consistency). Pour the carrots into the pan (the heat under the pan should be very low so that the carrots are not fried, but also do not cool down).
Add 2 tablespoons of olive oil to the Wok Pan. Put chicken breast in the heated oil. With continuous stirring, fry the breast for about 7 minutes. Add onion, curry and stir-fry for another 7 minutes with continuous stirring.
After the chicken, onion, curry are fried, add vegetables from the pan to them, fry with continuous stirring for about 1 minute over maximum heat. After that, pour the sauce into the Wok Pan, mix. Reduce heat and cover. We cook for about 3-5 minutes more (no longer - the vegetables should retain their consistency and taste, the carrots in the core remain dense, but no longer crunch).
The dish is ready! You can add freshly ground black pepper to taste. Its pungency and aroma transform the taste of the dish, adding new notes to it.
