Ingredients: Fish pike perch fillet (any is possible), Onions, Medium carrots, Hard cheese, Greens (dill, parsley) if desired, Garlic, Tomato paste, Salt, Ground black pepper, Lemon, Vegetable oil
Cooking method:
First, clean the fish, wash and separate the loin, remove the bones. Lightly beat off each piece, on one side, where there is no skin. Salt, pepper on both sides and pour with lemon juice. Leave to marinate for 1 hour. Cooking the filling: Cut the onion into cubes, three carrots and cheese on a fine grater. Fry onions and carrots in a frying pan in vegetable oil until tender, salt and pepper to taste.
We transfer it to a plate, try to transfer it so that there is as little oil as possible in the filling, the oil remaining in the pan will be useful to us for greasing the rolls, letting the vegetables cool. Add garlic to the cooled vegetables, passing through a press, finely chopped herbs and tomato paste, mix everything.
We take the fillet and put the filling on it, on the wide side of the fillet, about 1 tbsp. and distribute the fillets to half, sprinkle with grated cheese all over the fillets and roll them up, fix with a Toothpick.
We grease the form with vegetable oil, put it in the form of rolls and grease with the oil remaining from frying the vegetables. Preheat the oven to t ° 200 °, put the dish with rolls in the oven and cook for 30 minutes without covering!
