So, if your wheat is not polished, the grain must be soaked the day before. We wash the wheat and fill it with cold water so that it covers the grain. We leave at room temperature for several hours, and preferably overnight. This is a necessary step, since whole wheat is cooked for quite a long time (2-6 hours). But, if you have polished wheat (like mine), then you just need to rinse it very thoroughly until the water is transparent.
We transfer the washed wheat to a saucepan with a thick bottom of a suitable volume. You can also cook wheat in a multicooker on the Porridge mode. For 1 glass of cereal, I pour 2 glasses of water, but during the cooking process, you may have to add liquid if the wheat did not have time to fully cook and become soft. Cook the wheat over low heat, covering the pan with a lid, for 40 minutes. Stir the cereals every 10 minutes, and add salt 20 minutes after the start of cooking.
In the meantime, we will prepare delicious additives for the future kutya. We wash the poppy seeds from dust and possible debris, put them on a sieve so that the muddy water glass. After that, we transfer the poppy seeds to a dish suitable for the volume, fill it with cold water and put on the stove over medium heat. Bring to a boil, reduce heat to a minimum and cook the poppy seeds for 30 minutes. Then we put the boiled poppy on a sieve to drain the remaining liquid.
Next, we need to chop the poppy in any convenient way: using a food processor with a metal knife attachment or a hand blender. You can turn the poppy through a meat grinder a couple of times. As a result, the seeds will crumble and release white milk. Add sugar to the poppy seeds and mix well and thoroughly again.
Peeled walnuts should be fried in a dry skillet, oven or microwave. Instead of walnuts, you can use any other nuts - almonds, hazelnuts, cashews, peanuts... In general, the ones you like best. Grind the fried nuts. Rinse the raisins and pour boiling water over them. If the raisins were initially soft, 5 minutes of steaming is enough. Dry and hard should be left in hot water for 15-20 minutes, then drain the liquid and dry the raisins.
We add our delicious toppings to boiled wheat: chopped poppy seeds, fried nuts, raisins and honey to taste. Stir the porridge - the kutia is ready. Christmas wheat kutya is served in a common plate.
