Christmas cupcake or Stollen

Ingredients: vegetable oil, butter, sugar, eggs, cottage cheese, zest and juice of one lemon or orange, vanilla sugar, flour, baking powder, nuts, raisins, candied fruits, whatever you like, butter and powdered sugar for sprinkling, alcohol (rum, cognac, which is for soaking dried fruits)

Cooking method:

It is better to soak dried fruits overnight in alcohol, but I had no time, I left it for about an hour, then drained it.

Butter + vegetable beat until white with sugar, add one egg at a time, then cottage cheese, zest and juice. Mix flour with vanilla sugar and baking powder and also add to the total mass. And the last thing we add is a mixture of dried fruits. (I had: cherries, candied fruits, raisins, walnuts).

The dough turns out to be quite pleasant, we form bars of arbitrary shape from it, from this test we get 2 good Stollens, I made a double portion, it turned out 4 for the whole baking sheet.

We turn on the oven at 170 degrees, cover the baking sheet with parchment or a baking mat, put our cupcakes and send them to bake for 40-50 minutes, depending on the oven and the shape of the cupcakes.

Melt 50 g of butter, grease the hot Stollen and sprinkle generously with powdered sugar.

Store in the refrigerator wrapped, in foil or parchment paper.
