Cooking method:
Break the chocolate into pieces and melt in a water bath until smooth, remove from heat and cool slightly.
Separate the eggs into yolks and whites. Beat egg whites with a pinch of salt until fluffy.
Gradually add sugar (2 tablespoons) and beat until stable peaks.
Add the remaining sugar to the yolks, beat in a fluffy foam.
At medium speed of the mixer, add chocolate to the yolks, mix well until smooth.
Now gently, in four approaches, add the whipped proteins, mixing with a spatula from the bottom up.
We cover the baking sheet with siliconized parchment, evenly distribute the dough on top with a spatula, bake in an oven preheated to 180 ° for 15-18 minutes, cool the finished cake completely.
Now let's prepare the cream: we start whipping the cream at a slow speed, gradually increasing it, at the end we add powdered sugar.
